Molecular characterisation of Sicilian Prunus persica cultivars using microsatellites

In Sicily, a large indigenous population of cultivated peaches, nectarines, and platicarpa (flat peaches) shows a wide range of fruit quality and ripening periods. This diverse assortment of local cultivars is a resource, not yet exploited, for breeding programmes. The main purpose of this study was to fingerprint these indigenous accessions and to evaluate the molecular diversity between them. Fruit quality can be evaluated by combining chemical-physical and sensory analyses. In this trial, both instrumental and sensory analyses were carried out on fruit of 5 loquat cultivars (âNespolone di Trabiaâ, âSanfilipparaâ, âVirticchiaraâ, âMarcenA²â and âGolden Nuggetâ), with the aim of assessing their commercial quality. The influence of pasteurization temperature and time of treatment on the flesh firmness and the evolution of microbial communities was studied for table olives Cv. Nocellara del Belice, packed in glass jars and processed with a tunnel pasteurizer. Pasteurization at industrial scale was carried out within a tunnel pasteurizer applying the treatment at 75 °C for 8 min in the thermal center of the jars. Besides flesh firmness and microbial evolutions, pH, total ti-tratable acidity (TTA) and colour were evaluated for the table olives during storage at 6, 12 and 15 months from packing.
