Chemical Composition of Green Pea (Pisum sativum L.) Pods Extracts and Their Potential Exploitation as Ingredients in Nutraceutical Formulations
2021
Agro-industrial wastes contain a large number of important active compounds which can justify their use as innovative ingredients in nutraceutical products. This study aimed to provide a complete analysis of active molecules, namely (poly)phenols in pea pods water-based extracts, through a UHPLC-Q-Orbitrap HRMS methodology. Data showed that 5-caffeoylquinic acid, epicatechin, and hesperidin were the most relevant (poly)phenols found in the assayed extracts, with a mean value of 59.87, 29.46, and 19.94 mg/100 g, respectively. Furthermore, changes in antioxidant capacity and bioaccessibility of total phenolic compounds (TPC) after the simulated gastrointestinal (GI) process were performed usi…
Phenol Profiling and Nutraceutical Potential of
2019
In recent years, agricultural and industrial residues have attracted a lot of interest in the recovery of phytochemicals used in the food, pharmaceutical, and cosmetic industries. In this paper, a study on the recovery of phenol compounds from Lycium spp. leaves is presented. Ultrasound-assisted extraction (UAE) and microwave-assisted extraction (MAE) have been used with alcoholic and hydroalcoholic solvents. Methanolic UAE was the most successful technique for extracting phenols from Lycium leaves, and we used on leaves from L. barbarum and L. chinense cultivated in Italy. The extracts were then characterized as regards to the antioxidant properties by in vitro assays and the phenol profil…
An overview of the traditional and innovative approaches for pectin extraction from plant food wastes and by-products: Ultrasound-, microwaves-, and …
2018
Abstract Background A large amount of food wastes and by-products are produced from farm to plate. They represent valuable sources for the production of high-added value compounds such as pectin. Pectin is the methylated ester of polygalacturonic acid and presents a wide range of applications in pharmaceutical and cosmetic products as well as in food industry such as gelling agent in fruit-based products, stabilizer in fruit and milk beverages and fruit filling for bakery and confectionary products, among others. Therefore, pectin recovery is of great importance. Scope and Approach The commercially available pectin is almost exclusively derived from citrus peels or apple pomace, by-products…
Reuse of Food Waste and Wastewater as a Source of Polyphenolic Compounds to Use as Food Additives
2020
Abstract The problem of waste and byproducts generated from agro-industrial activities worldwide is an increasing concern in terms of environmental sustainability. In this ambit, the quantity of food wastes—produced in all steps of the whole food chain—is enormous, and it may be forecasted that food waste could amount to more than 120 billion tonnes by 2020. The reuse of food waste and wastewater as source of polyphenolic compounds could be an interesting discussion in this ambit. In fact, polyphenols obtained in this way might be used for food and non-food purposes by means of new, improved, and safe extraction methods. In light of the opportunity represented by the treatment of agro-indus…
Real-time optimization of the key filtration parameters in an AnMBR: Urban wastewater mono-digestion vs. co-digestion with domestic food waste
2018
[EN] This study describes a model-based method for real-time optimization of the key filtration parameters in a submerged anaerobic membrane bioreactor (AnMBR) treating urban wastewater (UWW) and UWW mixed with domestic food waste (FW). The method consists of an initial screening to find out adequate filtration conditions and a real-time optimizer applied to a periodically calibrated filtration model for minimizing the operating costs. The initial screening consists of two statistical analyses: (1) Morris screening method to identify the key filtration parameters; (2) Monte Carlo method to establish suitable initial control inputs values. The operating filtration cost after implementing the…
Mobilising Consumers for Food Waste Reduction in Finnish Media Discourse
2019
Raippalinna explores how consumers are mobilised for food waste reduction in media discourse. Food waste reduction initiatives are often criticised for putting the responsibility on individual consumers, but little research exists on the mobilisation of consumers in actual contexts. Through critical discourse analysis of media texts, Raippalinna investigates how the food waste problem and consumers are constructed in relation to each other in Finlands leading newspaper Helsingin Sanomat 2010–2017. The analysis demonstrates that the discourses of consumer mobilisation appear mostly as consumer education where the consumer’s role is to manage individual consumption and household practices. Th…

Two decades of discussion on charitable food aid in Finland : analysing the framing by and through the media

Jo kaksi vuosikymmentä virallisen sosiaalipolitiikan rajapinnoilla toiminut ruoka-apu on murrosvaiheessa: Tulisiko toiminta hiljaisen hyväksynnän sijaan tunnustaa, jolloin avun kohdentamista ja järjestämistä voidaan avoimesti kehittää yhdessä kirkon, kunnallisen sosiaalitoimen ja yksityisen sektorin kesken? Onko toiminnan fokus siirtymässä väliaikaiseksi tarkoitetusta akuutin nälän torjunnasta kohti sosiaalipoliittisen ruoka- köyhyyden ja ekologisen ruokahävikin ongelmat yhdistävää ratkaisumallia? Julkisen, yksityisen ja kolmannen sektorin yhteistyönä toteutettavan saksalaisen ruoka-apumallin (Berliner Tafel -ruokapankkiverkosto) rantautuminen Suomeen (Yhteinen Pöytä …
From Scarcity to Abundance : Food Waste Themes and Virtues in Agrarian and Mature Consumer Society
2019
Uusitalo and Takala address the food waste problem as a societal phenomenon and examine ethical virtues, values linked to them and food practices in two different time periods: agrarian society (1885–1917) and mature consumer society (2008–2017), in Finland. They use data from newspapers to uncover how ethical principles can underpin understanding of the food waste phenomenon. The study shows how the virtues adopted by food chain actors guide their practices towards sustainable ways of handling excess food. While societal themes of food waste are changing, virtues and food practices are changing as well, but some deep-rooted societal virtues and values persist. The chapter concludes with re…
