Apple-products phytochemicals and processing: a review.

Epidemiological studies have linked the consumption of apples with reduced risk of some cancers, cardiovascular disease, asthma, and diabetes. Extensive research exists on apples and the health benefits of their beverages and phytochemicals. The purpose of this paper is to review the most recent literature in this area focusing on phytochemicals, phytochemical bioavailability and antioxidant behavior.

Fruit quality and flavor compounds before and after commercial harvest of the late-ripening ‘Fairtime’ peach cultivar

ABSTRACT In this work quality of tree ripe and commercial ripe ‘Fairtime’ peach fruit was evaluated during fruit maturation and storage. Quality parameters and volatile fraction were monitored at intervals of 7-15 days from pit hardening until 10 days after commercial harvest and after 7, 17 and 24 days of refrigeration. In fruit on the tree, weight increased quadratically, diameter and peel color increased linearly, whereas flesh firmness decreased linearly. Soluble solids (SS) reached maximum levels at commercial harvest, whereas acidity started declining after commercial harvest. In the peel, esters and alcohols showed opposite trends. Agricultural externalities and environmental regulation: evaluating good practice in citrus production

Economic activity takes place in a scenario characterized by an increasing number of environmental regulations aimed at bringing under control the emission of contaminating wastes. In this paper, we evaluate the impact of transforming a code of good practice in nitrogen fertilization on Spanish citrus fruit farms into an environmental regulation of compulsory fulfilment. Using data envelopment techniques, we calculate unrestricted and environmentally regulated short-run maximum profits. Both profit values are then used to compute an index of the cost of regulation. This paper compares the organic and conventional citriculture systems in Spain from the perspective of their technical efficiency. The primary objective of the research is to compare the relative efficiency of these two systems in relation to a metafrontier that envelops both technologies. Evaluation of the original dose in irradiated dried fruit by EPR spectroscopy

Abstract The electron paramagnetic resonance spectroscopy (EPR) is one of the physical methods, recommended by the European Committee for Standardization, for the identification of irradiated food containing cellulose, such as dried fruit. In this work the applicability of EPR as identification method of irradiated pistachios, hazelnuts, peanuts, chestnuts, pumpkin seeds is evaluated; the time stability of the radiation induced signal is studied and the single aliquot additive dose method is used to evaluate the dose in the product.

Wine proteins not only influence wine stability but are also being discussed as potential allergens. Proteins from red, rose, and white wines were enriched by dialysis and lyophilization followed by separation by SDS-PAGE. Significant differences were detected in the protein compositions of the analyzed wine varieties, and the major protein bands were identified by mass spectrometry after in-gel digestion with trypsin. In German Portugieser red wine, a total of 121 tryptic peptides were identified, which were attributed to 12 grape proteins and 6 proteins derived from yeast.
