The anodic oxidation of concentrated l-alanine on smooth electrodes such as platinum and glassy carbon electrodes was studied. Contrary to the previous studies performed up to now with diluted l-alanine, the electrochemical process generated here results in a completely different situation. The oxidation on smooth platinum was carried out by electrochemical quartz crystal microbalance (EQCM) coupled to cyclic voltammetry technique. The effects of concentration, scan rate, and pH (zwitterion at pH = 6 and alkaline media at pH = 13) on potential values were examined. ABSTRACT: Most low water content or frozen food products are partly or fully amorphous. This review will discuss the extent to which it is possible to understand and predict their behavior during processing and storage, on the basis of glass transition temperature values (Tg) and phenomena related to glass transition. Two main conclusions are provisionally proposed. Firstly, glass transition cannot be considered as an absolute threshold for molecular mobility. Transport of water and other small molecules takes place even in the glassy state at a significant rate, resulting in effective exchange of water in multi-domains foods or sensitivity to oxidation of encapsulated materials. Non-exponential relaxation in disordered materials: Phenomenological correlations and spectrally selective experiments

Abstract In most glass-forming materials external perturbations are relaxed in a non-exponential fashion. It is shown that the degree of non-exponentiality is phenomenologically correlated with the departure from simple thermally activated behavior as measured by the fragility index m. In model glass formers such as the Ge-As-Se ternary alloy, and to some degree for amorphous materials in general, the correlations with these properties are observed also for other characteristic features. Translational and rotational molecular motion in supercooled liquids studied by NMR and forced Rayleigh scattering

It has been shown that translational diffusion coefficients, Dt, in the supercooled van der Waals liquids, orthoterphenyl, phenolphthaleindimethylether, and salol, have a weaker temperature dependence than the shear viscosity, η, at T ≲ 1.2Tg and can be described by Dt ∼ η−χ with χ < 1 whereas Dr ∼ η−1 applies for the mean rotational diffusion coefficients, Dr, down to the glass transition temperature, Tg. This apparent decoupling of translational and rotational motion has been discussed in relation with possible anomalous short time diffusion, spatial heterogeneity, and cooperative molecular motions close to Tg.
MOCVD growth of CdTe on glass: analysis of in situ post-growth annealing

Abstract In this paper, we analyse the growth by MOCVD of CdTe on glass substrates using in situ post-growth annealing. First, in order to perform a systematic study, polycrystalline layers of CdTe were deposited by MOCVD on glass substrates. The structure and morphology of the layers was investigated as a function of different growth parameters, temperature, VI/II precursor molar ratio and substrate position on the susceptor. An activation energy of Ek=20.7 kcal/mol was obtained from the experimental data. Abstract Ionic transport of the glass-forming metalnitrate mixtures [Ca(NO 3 ) 2 ] 0.44 [KNO 3 ] 0.56 (MKN), and [Mg(NO 3 ) 2 ] 0.44 [NaNO 3 ] 0.56 (MNN) was investigated near the glass transition using broadband spectroscopy of the complex conductivity to 300 MHz. The real part of the conductivity exhibits a transition from frequency independent to power law behavior as found in most ionic conductors. At high frequencies the frequency exponent approaches unity and becomes larger at low temperatures. In the real part of the dielectric constant, a relaxation step could be observed in CRN. Supercritical fluid extraction of pesticides

The extraction behaviour of 10 μg samples of five pesticides and some related compounds from glass wool with supercritical CO2 has been investigated under several conditions (10 MPa, 20 MPa extraction pressure, 313 K, dry and water saturated CO2). The extraction fluid was decompressed over a line of little columns, filled with 3μ Si60 or RP18, and the amount of deposited material was analyzed by HPLC for each of these columns. Due to the progressive pressure/density reduction along the line, the solubility diminishes and hence the compounds are deposited according to their polarity/vapor pressure earlier or later on the line. Abstract Low moisture baked products were investigated with a view to characterising the effect of both formulation and humidity on their physical stability. At the end of the baking process, the samples were in the amorphous state as a result of starch gelatinization and sugar melting. Their thermal properties were analyzed with differential scanning calorimetry and their glass transitions were studied. The DSC thermograms were thoroughly studied through a Gaussian deconvolution of the first derivative of their heat flow.
