Consumer texture preferences: Effect of age, gender and previous experience

Four different strawberry candies with varying thickening agents (pectin, gelatin, starch, and gelatin + starch) were rated by three consumer age groups: teenagers (13–14 years), young adults (19–23 years) and the middle-aged (40–63 years) (n = 60 in each group). Age, gender, use frequencies and hedonic ratings often commercial candy types were collected as background information. Four preference groups were found by using preference mapping. The most important factor predicting preference of a sample were hedonic evaluations of commercial candies whose texture was similar to that of the test sample. This chapter will provide the background information that is required in order to contextualise further analysis, doing so by outlining the main aspects of daily life within the contrade of Siena and the social and institutional organisation of those institutions. It proposes that their social order has to be interpreted in relation to the palio horse race, a festival which takes place biannually in Siena’s central square, and which is visited by a significant number of national and international tourists.

Despite important advances made in recent decades, women are still underrepresented in science (less than 30% of authorships). This study presents a bibliometric analysis of all the Psychology articles published in 2009 included in the Web of Science database (Thomson Reuters) in order to examine the contribution of women in contemporary Psychology, their pattern of research collaboration, the scientific content and the scientific impact from a gender perspective. From a total of 90,067 authorships, gender could be identified in 74,413 (82.6%) of them, being 40,782 (54.8%) male authorships and 33,631 (45.2%) female authorships.
