Interactions between β-lactoglobulin (BLG) and aroma compounds were investigated by complementary techniques for a better knowledge of binding mechanisms between proteins and aroma compounds at a molecular scale. Two binding sites have been defined for the monomeric BLG, one internal site within the central calyx, and one external site between the calyx and the α helix. In a first step, a relation between the ligand structure and its binding behaviour was established from the study of impact of a wide range of aroma compounds on the structure of native BLG. Critical evaluation of two commonly used techniques for the treatment of data from extract dilution sniffing analysis

The data from the extract dilution sniffing analysis of beer samples have been treated by two methods of analysis to give either «charm» or «FD» values. The results obtained from these two methods were compared and demonstrated that the rank order of intensity of the odor-active regions was different for most panelists when the data were presented as charm rather than FD values. Previous research by Zhang and Savalei (2015) proposed an alternative scale format to the Likert scale format: the Expanded format. Scale items in the Expanded format present both positively worded and negatively worded sentences as response options for each scale item; therefore, they were less affected by the acquiescence bias and method effects that often occur in the Likert scale items. The major goal of the current study is to further demonstrate the superiority of the Expanded format to the Likert format across different psychological scales. This study aimed to develop a measure of mental imagery evaluation in preschool children. Three studies were conducted: Study 1 focused on the exploration of the factorial structure, reliability, and Item Response Theory (IRT) discrimination on a sample of children from 4 to 5 years old (N = 100; 50% males and 50% females); Study 2 focused on the confirmation of results about dimensionality on a sample of children from 4 to 7 years old (N = 170; 50% males and 50% females); and Study 3 focused on verifying criterion validity on a sample of children from 4 to 5 years old (N = 70; 47.1% males and 52.9% females). Rasch Analysis of the Japanese Version of Teacher Efficacy for Inclusive Practices Scale: Scale Unidimensionality

This study aimed to examine the construct validity of the Japanese version of the Teacher Efficacy for Inclusive Practices (TEIP) scale. The sample consisted of 250 teachers in Japan. Rasch analysis was used to examine the psychometric properties of the scale. Results did not support the 18-item Japanese version of the TEIP scale as a unidimensional scale for measuring TEIP. However, they do support the final 14-item Japanese version of the TEIP scale as a unidimensional scale for measuring TEIP. Open-ended (OE) items are widely used to gather data on student performance in international achievement studies. However, several factors may threaten validity when using such items. This study examined Finnish coders’ opinions about threats to validity when coding responses to OE items in the PISA 2012 problem-solving test. A total of 6 discussions during 6 coder practice sessions (on 6 OE items) and an interview between 5 coders were audiorecorded and analyzed by means of content analysis, and 3 main threats to validity were found: (1) unclear and complex questions; (2) arbitrary and illogical coding rubrics; and (3) unclear and ambiguous responses.
