Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). En este trabajo intentaré explicar por qué las virtudes cívicas constituyen una condición necesaria para la estabilidad de las instituciones en un Estado liberal. Sin embargo, este punto pone en entredicho algunas de las coordenadas de la topografía moral de Rawls. Por esta razón, presentaré una interpretación de las últimas obras de Rawls que pueda tener en cuenta el papel de las virtudes cívicas en el fortalecimiento de las instituciones en una comunidad “políticoliberal”. Finalmente, expondré por qué una cierta versión del perfeccionismo liberal es coherente con la doctrina rawlsiana y puede a la vez tomar en serio el papel de las virtudes cívicas sin constituir una forma de paternalismo…
