National audience; The use of pulses as ingredients for the production of food products rich in plant proteins is increasing. However, protein fractions prepared from pea or other pulses contain significant amounts of saponins, glycosylated triterpenes which can impart a bitter taste to the final food product. Bitter flavours are currently either removed by energy-requiring physico-chemical treatments or masked by additives. Lipid composition of lacrimal glands in rats: comparison with human lacrimal glands and possible nutritional modulation

International audience; Purpose:: Prostaglandins (PGs) have been found in tears of patients with ocular surface disorders, and are powerful markers of inflammation. The lacrimal gland has been reported to synthesize PGs. Polyunsaturated fatty acids esterified in phospholipids are the precursors of pro- and anti-inflammatory PGs. The aim of this study was to compare the phospholipid content of the lacrimal gland in human and in different rat species. Abnormal blood levels of ether-lipids and DHA have been associated with several neurological disorders such as Alzheimer Disease. Familial chylomicronaemia syndrome (FCS) is a rare, inherited disorder characterised by impaired clearance of triglyceride (TG)-rich lipoproteins from plasma, leading to severe hypertriglyceridaemia (HTG) and a markedly increased risk of acute pancreatitis. It is due to the lack of lipoprotein lipase (LPL) function, resulting from recessive loss of function mutations in the genes coding LPL or its modulators. Cyclopropane Fatty Acid Synthase from Oenococcus oeni: Expression in Lactococcus lactis subsp. Cremoris and Biochemical Characterization

Bacterial cyclopropane fatty acid synthases (CFA synthases) catalyze the transfer of a methyl group from S-adenosyl-L-methionine (AdoMet) to the double bond of a lipid chain, thereby forming a cyclopropane ring. CFAs contribute to resistance to acidity, dryness, and osmotic imbalance in many bacteria. This work describes the first biochemical characterization of a lactic acid bacterium CFA synthase. We have overexpressed Oenococcus oeni CFA synthase in E. coli in order to purify the enzyme. The optimum cyclopropanation activity was obtained at pH 5.6 and 35.8 °C. Regulation of the synthesis of aryl metabolites by phospholipid sources in the white-rot fungus Bjerkandera adusta

The white-rot basidiomycete Bjerkandera adusta was cultivated in a liquid medium enriched with l-phenylalanine and various phospholipid sources (lecithin, egg yolk and asolectin). Three aromatic metabolites (benzaldehyde, benzyl alcohol and benzoic acid) were produced under these culture conditions. High concentrations of benzaldehyde (404 mg l–1) were obtained when the cultures were supplemented with 10 g lecithin l–1. Benzyl alcohol production was promoted when the strain was grown with 5 or 10 g lecithin l–1. Photodegradation of lincomycin in aqueous solution

Aqueous solutions of lincomycin were irradiated with UV light in homogeneous and heterogeneous systems. Lincomycin disappeared in both systems but the presence ofTiO2noticeably accelerated the degradation of the antibiotic in comparison with direct photolysis. The rate of decomposition was dependent on the concentration of lincomycin and followed a pseudo-first-order kinetics. Photolysis involved only the oxidation of lincomycin without mineralization. Sterol oxidation in ready-to-eat infant foods during storage.

The effect of storage on sterol oxidation of ready-to-eat infant foods was evaluated. Two different flavor (honey -LH- or fruits-LF-) liquid infant foods, prepared with milk and cereals, were stored for 0, 2, 4, 7 and 9 months, at 25ºC. Sterol oxidation products (SOP) were extracted by cold saponification, purified by silica solid-phase and analyzed by gas chromatography (GC) and GC-mass spectrometry. -sitosterol was the most representative sterol, followed by cholesterol and campesterol.
