From’Innov: a new technology to obtain aroma in solubilized soft-cheese

The dairy platform of the STLO, Rennes, developed an innovative technology and more sustainable cheese making process (INRAE patent, From’Innov, WO2016108024). This technology consists of mixing a texture matrix obtained by ultrafiltration with one or more aromatic matrix. The latter is innovative: it allows obtaining a maximum of aroma in a short time, less than a few days. The principle is to grow each of microorganisms in an optimized middle with essential nutrients, optimal pH and temperature, and O2 if necessary. Exploring agency and entrainment in joint music-making through the reported experiences of students and teachers

This qualitative interview-based study draws on the reported experiences of students and teachers to explore how agency and entrainment resource and constrain each other in joint music-making. The participants were 23 students of Grades 6 and 11 music teachers from different primary schools. The qualitative content analysis of the 11 student pair interviews and 11 one-to-one teacher interviews indicated that experiences of music-related interpersonal entrainment intertwine with different dimensions of agency. Contents and functions of dramatizations in team decision making

This study examines the contents and functions of dramatizations in natural team decision making. Theoretically, the study employs symbolic convergence theory to understand decision making as a complex phenomenon constructed in symbolic communication. Observational meeting data and thematic interview data from an autonomous team in Finland were analyzed. A fantasy theme analysis and an inductive, rhetorical discourse analysis revealed three rhetorical visions and seven functions of dramatizations in the team’s decision making. The wine industry generates a great amount of waste every year, thus its valorization is of most importance. This study uses red, fermented pomace from Cabernet Sauvignon and Feteasca Neagra cultivars. The phenolic compounds were extracted using four different extractions and the content of total polyphenols was determined using a spectrophotometrical method. Several phenolic compounds were analyzed using an HPLC method.
