Our research produces a theoretic model offering insight into a comprehesive process of influences to business student ethical decision making, and its implications for the purposeful moral development of students. Volatile Compounds in Red Wines Processed on an Industrial Scale by Short Pre-fermentative Cold Maceration

Nero d’Avola and Shiraz grapes were subjected to pre-fermentative cold maceration at 4°C for about 24 h in industrial winemaking, in order to evaluate the effects of the pre-treatment on aroma profile. The volatile compounds were identified by gas chromatography-mass spectrometry and grouped into 14 chemical families 4 and 9 months after bottling. Principal components analysis (PCA) plots of the volatile compounds showed clear separation among wines from the Shiraz and Nero d’Avola varieties. International audience; This study uses the case of an oncological paediatric service to discuss sensemaking and discourse ethics in the context of caregiving, building ethical competence to provide the best care possible to children. The patients and their families live in paediatric care, some for several years. At length, an intense relationship may develop between the medical staff and patients' family members, albeit at times a difficult relationship. Still, interviews conducted indicated that when caregivers provided the best care possible to these patients, even in this harsh environment, an ethics of sensitivity made a positive difference both for the patients and the medical staff.…

The effects of fatty acids, extracted during prefermentation grape skin-contact on Saccharomyces cerevisiae and Oenococcus oeni, were studied. The influence of skin-contact on total fatty acid content was evaluated both in Chardonnay must and in synthetic medium. Prior to alcoholic fermentation, the skin-contact contributes to a large enrichment of long-chain fatty acids (C 16 to C 18:3 ). These results induced a positive effect on yeast growth and particularly on cell viability.
