Consumer attitudes in the election of functional foods

2017

In recent years, the rise of functional foods has played a key role in healthy habits, due to growing consumer concern about health and the perception that diet directly affects healthiness. The objective of this work is to study how consumer attitudes influence the choice and consumption of functional foods in Spain. For this purpose, a proposed model is adapted to the field of study, integrating different models and theories. These theories have achieved broad support in the literature. With a sample of 333 consumers, we can conclude that consumer attitudes towards functional foods have a direct influence on the willingness to consume them. A healthy lifestyle has no effect on these attit…

Label Style and Color Contribution to Explain Market Price Difference in Italian Red Wines Sold in the Chinese Wine Market

2017

This study employs a hedonic price methodology to investigate the implicit price of individual labelling characteristics of Italian red wines sold in the Chinese market. Our results highlight the most important quality attributes (extrinsic and intrinsic) given in the label capable to explain price difference. In particular, reveal significant premium price for wine origin, identified in particular through the DOC/DOCG appellation given in the label, and for clean labels or labels with particular designs. On the contrary, a price discount has been revealed for Italian wines produced with local grape varieties and with a label characterised by warm colors. These results, partly in disagreeme…

Towards more sustainable food systems. Addressing food waste at school canteens

2018

Food Waste is a global significant issue for ethical, environmental and economic reasons, while its management is difficult due to its frequent low visibility. Individual choices and preferences are closely related to the generation of food waste although likely to be modified through education and awareness campaigns. In particular, school canteens are big generators of food waste and, at the same time, provide a great opportunity to improve habits regarding nutrition and education on sustainability, thus impacting the future of the food system. The end purpose of this research is identifying the causes of food waste and unveiling best practices towards its reduction. To achieve this goal,…

Purchase intention and purchase behavior online: A cross-cultural approach

2020

This article aims to explore the key factors on e-commerce adoption from elements of social psychology, such as attitude, subjective norms, perceived behavioral control, ease of use and perceived usefulness, introducing the study of non-traditional elements like buying impulse, compatibility, and self-efficacy in online stores, contrasting relationships in a cross-cultural environment. The proposed model is tested from quantitative research with a sample of 584 online consumers in Colombia and Spain. The following statistical analyses were conducted: CFA, structural equations, measurement instrument invariance, and multi-group analysis with EQS 6.3 software. The study reveals that self-effi…

Creation of a brand model through SEM to predict users' loyalty and recommendations regarding a public sports service.

2021

Brand perception is a key element in achieving business success: how a brand is perceived by current and potential users determines what they think and their disposition towards the brand. The users' perception also determines whether they will perceive the sports service as offering a greater quality or value than other services, whether they will be more loyal, or whether they will recommend the service. This paper analyses the brand perception of users of a public sports service, creating a model of structural equations that analyses how credibility and trust influence a user's congruence with the brand and the generation of positive attitudes towards the brand and how these variables in…

Computational Fluid Dynamics Suggests Ecological Diversification among Stem-Gnathostomes.

2020

Summary The evolutionary assembly of the vertebrate bodyplan has been characterized as a long-term ecological trend toward increasingly active and predatory lifestyles, culminating in jawed vertebrates that dominate modern vertebrate biodiversity [ 1 , 2 , 3 , 4 , 5 , 6 , 7 , 8 ]. This contrast is no more stark than between the earliest jawed vertebrates and their immediate relatives, the extinct jawless, dermal armor-encased osteostracans, which have conventionally been interpreted as benthic mud-grubbers with poor swimming capabilities and low maneuverability [ 9 , 10 , 11 , 12 ]. Using computational fluid dynamics, we show that osteostracan headshield morphology is compatible with a dive…

Pasta experience: Eating with the five senses - a pilot study

2018

Dried pasta is the Italian food “par excellence”. Traditional foods have characteristics that can stimulate or evoke in the consumer sensorial stimuli and experiences, especially when these foods are consumed in a typical-traditional restaurant. Traditional restaurants can use sensory marketing as a promotional advantage, creating a unique and original atmosphere that can represent their main way of differentiation. The aims of this paper are to know consumer liking with regard to two high quality types of Sicilian pasta, common dried pasta, and whole-wheat pasta, consumed in three different venues of a typical-traditional Italian franchised restaurant, and to measure the influence of envir…

The Quality Perception of Fresh Berries: An Empirical Survey in the German Market

2016

AbstractThe present work aimed to investigate the main quality attributes that influence the purchase decisions of fresh berries. To this regard, an empirical survey has been conducted by interviewing 200 consumers of fresh berries at the exit of the main centers of the large scale retail trade in the city of Munich (Germany). An econometric model has been adopted to examine the relationship that single attributes has on the purchase frequency of fresh berries. Results showed that nutraceutical properties and health benefits of berries have a strong appeal to the consumers and confirmed that intrinsic attributes are determinants of consumer purchase decision

Motives for buying local, organic food through English box schemes

2018

Purpose The purpose of this paper is to explain the growing interest of English consumers in local organic food sold through box schemes, by providing insights into the motives of customers of such schemes and examining the relationship with their awareness about problems of the agro-food system. Design/methodology/approach A mixed methods approach combined in-depth interviews with 22 box scheme customers with a quantitative survey of 416 consumers, analysed by means of principal component analysis and an ordered logit model. Findings Consumers of small local organic box schemes in England are both altruistically and hedonistically motivated. This includes a strong political motivation to …

Role of MUC1 in idiopathic pulmonary fibrosis: mechanistic insights

2017

Background: Idiopathic pulmonary fibrosis (IPF) is a chronic, progressive and irreversible form of fibrotic interstitial lung disease. MUC1, a membrane-bound O-glycoprotein, is considered as oncogenic molecule by altering signaling pathways involved in cellular processes related to IPF. In previous studies we have observed an up-regulation of MUC1 and its phosphorylated forms in IPF lung tissue. However the exact participation of MUC1 in IPF is currently unknown. Objective: To analyze the mechanism of MUC1-induced lung fibrosis in different cellular and animal models of IPF. Methods: The intracellular mechanism of MUC1 was evaluated by western blot, immunoprecipation and immunofluorescence …
