In-Depth Investigation of the Safety of Wooden Shelves Used for Traditional Cheese Ripening

ABSTRACT The main goal of this research was to characterize the bacterial diversity of the wooden boards used for aging traditional Sicilian cheeses and to evaluate whether pathogenic bacteria are associated with these surfaces. Eighteen cheese dairy factories producing three traditional cheese typologies (PDO Pecorino Siciliano, PDO Piacentinu Ennese, and Caciocavallo Palermitano) were selected within the region of Sicily. Neurological manifestations of the West Nile virus infection in some cases found in the clinic of infectious diseases in Sibiu, Romania

Background The neurological manifestations in the West Nile virus infections are present in less than 1% of the diagnosed cases, neurological manifestations which may take many different forms, from encephalitis, meningitis, GuillainBarre syndrome, optic neuritis to polio-like manifestations. We aimed to evaluate the clinical and paraclinical aspects of the cases presenting neurological infections caused by the West Nile virus diagnosed and treated in our clinic.

Regeneration of the cell wall in protoplasts of Candida albicans. A cytochemical study using wheat germ agglutinin and concanavalin A.

To assess the dynamics of synthesis of the wall by regenerating Candida albicans protoplasts deposition of chitin and mannoproteins were investigated ultrastructurally using wheat germ agglutinin conjugated with either horseradish peroxidase or colloidal gold, and Concanavalin A coupled to ferritin respectively. Freshly prepared protoplasts lacked wheat germ agglutinin receptor sites but after 1-2 h of regeneration, they were detected. After 4-5 h of regeneration, the cell wall showed a discrete structure which was only labelled with wheat germ agglutinin in thin sections. Antioxidant capacity of cow milk, whey and deproteinized milk

The total antioxidant capacity (hydrophilic plus lipophilic) of sixteen different commercial samples of pasteurized and ultra high temperature (UHT) treated milk was determined using the oxygen radical absorbance capacity assay using fluorescein as a fluorescent probe. A significant correlation between the percentage of fat and the value of the total antioxidant capacity was found in milk samples obtained from the same batch of raw milk. Analyses of the whole milk, whey and deproteinized milk showed that the major contributor to the total antioxidant capacity of whole milk was the casein fractions, while albumin was the major contributor to the total antioxidant capacity of whey protein. Water vapour permeability, thermal and wetting properties of whey protein isolate based edible films

Abstract This study deals with the effect of whey protein isolate (WPI) and glycerol (GLY) used as a plasticizer on some physical properties of cast whey protein isolate (WPI) films. Films were prepared from heated (80 °C for 30 min) aqueous solutions of WPI at 7, 8, 9 and 10% (w/w), GLY (40%, w/w, of WPI) and WPI at 8% (w/w), GLY (30, 40, and 60%, w/w, of WPI). For all types of films, water vapour permeability for four relative humidity differentials (30–100%, 30–84%, 30–75%, and 30–53%), surface and thermal properties were measured. Sialic acid (N-acetyl and N-glycolylneuraminic acid) and ganglioside in whey protein concentrates and infant formulae

Abstract Sialic acid and gangliosides content and profiles were analyzed in infant formulae, whey protein concentrates and human milk. In infant formulae, N-acetylneuraminic (Neu5Ac) and N-glycolylneuraminic (Neu5Gc) acid ranged from 147.6–199.7 to 3.3–8.3 mg L −1 , in whey protein concentrate from 1.6–2.4 g 100 g −1 to 2.8–20.2 mg 100 g −1 and in human milk from 299.9 to 2.1 mg L −1 . Gangliosides ranged from 0.25 to 2.29 mg lipid-bound sialic acid L −1 in reconstituted infant formula, the main gangliosides being GD 3 (73.3–55.5%), GM 3 (3.5–36.6%) and GT 3 (1.4–14.1%) and O-acetyl-GD 3 (5.3–18.9%). Complete genome sequence of a new Bacteroidaceae bacterium isolated from anaerobic biomass digestion

Here, we present the genome sequence and annotation of HV4-6-C5C, a bacterial strain isolated from a mesophilic two-stage laboratory-scale leach bed biogas reactor system. Strain HV4-6-C5C may represent a new genus of the family Bacteroidaceae and may have a key role in acidogenesis and acetogenesis steps during anaerobic biomass digestion.

Health and disease imprinted in the time variability of the human microbiome

Human microbiota plays an important role in determining changes from health to disease. Increasing research activity is dedicated to understand its diversity and variability. We analyse 16S rRNA and whole genome sequencing (WGS) data from the gut microbiota of 97 individuals monitored in time. Temporal fluctuations in the microbiome reveal significant differences due to factors that affect the microbiota such as dietary changes, antibiotic intake, early gut development or disease. Here we show that a fluctuation scaling law describes the temporal variability of the system and that a noise-induced phase transition is central in the route to disease.
