Effect of red wine soaking on the microbiological profile, total phenolic content and sensory aspects of an ovine pressed cheese

The aim of this study was to produce an ovine pressed cheese with high polyphenol content. To this purpose, fresh Primosale Pecorino cheese was soaked for seven days in Nero d’Avola wine (NDW) and was indicated as experimental cheese production (EP). The final cheese was characterized for its microbiological, chemical and sensory characteristics. Specifically, cheese making was performed with pasteurized ewes’ milk and a commercial starter culture. Control cheese production (CP) did not include the soaking phase in NDW. Nach chronischer VerfUtterung von90Sr in Mengen von 140 und 350 pC/g Ca konnte bei Ratten eine leichte Beeintrachtigung der Ausscheidungsleistung der Leber im Bromsulfonphthalein-Test nachgewiesen werden. Diese Wirkung verstarkte sich mit Erhohung der zugefUhrten90Sr-Menge und mit Verlangerung der FUtterungsdauer. Da der Anstieg der Farbstoffretentionswerte in diesen Versuchen nur ein geringes Ausmas erreichte, wird somit wahrscheinlich gemacht, das durch eine sehr lang dauernde FUtterung von90Sr mit den hier gewahlten Dosierungen keine Leberschadigung ausgelost wird.

The aim of the present survey was to ascertain the attitudes of Italian neonatal intensive care units (NICUs) regarding this point. Method: A questionnaire, with multiple choice answers, regarding the timing of enteral feeding, its progression, the different techniques utilised, the eventual use of fortifiers and the interrupting criteria, was mailed to 92 Italian NICUs. Evaluation of microbial diversity during the manufacture of Fior di Latte di Agerola, a traditional raw milk pasta-filata cheese of the Naples area

Microbial diversity of the raw milk for the production of Fior di Latte di Agerola and its changes during cheesemaking were studied. Viable counts showed that at the end of curd ripening, loads of lactic acid bacteria, both mesophilic and thermophilic rods and cocci, higher than those commonly evidenced in similar cheeses produced by using natural or commercial starters, were detected. Fluorometric determination of chemically available lysine: adaptation, validation and application to different milk products.

A spectrophotometric method based on the reaction between available lysine and ortho-phthaldialdehyde (OPA) was adapted and validated for fluorometric determination of the chemically available lysine contents in milk matrices (UHT and conventional in-bottle sterilized cow milk, milk-based infant formulas and infant formula ingredients). The values of the analytical parameters show its usefulness as a routine method (linearity, r = 0.9992; detection limit, 0.0066 mg/mL assay; accuracy, 99-108%; precision, intra-day 2.1-5.9% and inter-day 3.5 10.2%). Antiviral activity of aged green tea extract in model food systems and under gastric conditions.

Aged-green tea extract (GTE) is known to reduce the infectivity of hepatitis A virus (HAV) and murine norovirus (MNV), a human norovirus surrogate, in vitro and in washing solutions. Initially, the effect of aged-GTE was evaluated on virus like particles (VLPs) of human norovirus (HuNoV) genogroup I (GI) by a porcine gastric mucine (PGM)-enzyme-linked immunosorbent assay (ELISA) and transmission electron microscopy (TEM), and on HuNoV GI suspensions by an in situ capture-RT-qPCR method, suggesting that HuNoVs are very sensitive to aged-GTE treatment at 37 °C. Mild to moderate iodine deficiency has been found among young Norwegian women of reproductive age. In Norway, cow’s milk is the main source of iodine; however, milk consumption is decreasing, particularly among young women. Die Erzeugung einer alimentaren Acidose mit 200 mAq NH4Cl/kg Futter bei wachsenden Ratten fuhrt bei Mannchen und Weibchen zu einer schlechteren Protein-Efficiency, aber nur bei den Mannchen zu einer geringeren Wachstumsgeschwindigkeit. Eine mit NaHCO3 in analoger Weise induzierte alimentare Alkalose hat weder bei den Mannchen noch bei den Weibchen einen sicheren Einflus auf die Protein-Efficiency und auf die Wachstumsgeschwindigkeit.
