Relationships between sodium mobility, in-mouth salt and aroma release, and flavour perception : application to model cheeses

The aim of this work is to understand the effects of changes in the composition of model cheeses on mobility, release and perception of flavor molecules (salt, aroma compounds). Six flavoured model cheeses were formulated (3 lipid/protein (L/P) ratios and 2 salt contents). The microstructure and the rheological properties of the model cheeses were characterized respectively by confocal microscopy and by uniaxial compression test. The mobility of sodium ions was analyzed by 23Na NMR. The kinetics of sodium release was followed in water and then in saliva during consumption of the model cheeses. Gustatory information is considered to be important for animals to control behavior when they seek for food or partners. 60 members of gustatory receptor (Gr) genes have been identified in Drosophila.. However little is now about mechanisms of taste perception and transduction in response to stimuli. Para establecer una teoría social crítica, la teoría del reconocimiento de Axel Honneth intenta superar el déficit sociológico de la teoría de la acción comunicativa de Habermas. La pugna por no ser despreciado, aunque sea no verbal, puede ser entendida por otro, ya que el sufrimiento es, como decía Adorno, un lenguaje. En el presente artículo estudiamos una práctica de silenciamiento de ese lenguaje, referida a la primera forma de reconocimiento, el amor, a partir del tratamiento artístico de un caso extremo: el sacrificio de Isaac por Abraham. The aim of the present study was to analyze the growth and physiological performance of two coexisting species, Trifolium fragiferum, and Trifolium repens, under the effect of NaCl and rhizobial symbiosis. Seeds of T. fragiferum and T. repens were collected from populations in the wild, and plants were cultivated in an automated greenhouse, two plants per container. Three basic types of planting were performed: (1) both plants were T. fragiferum (single species), (2) one T. fragiferum and one T. repens (species coexistence), (3) both plants were T. repens (single species). Algunes dades sobre la influència de les proses mitològiques de Corella a les «Transformacions» de Francesc Alegre

A través d’una comparació entre les proses mitològiques de Corella i les Transformacions de Francesc Alegre l’autora mostra que Alegre utilitza materials provinents de les Lamentacions i del Parlament en casa de Berenguer Mercader de Joan Roís de Corella per a la traducció catalana medieval de les Metamorfosis d’Ovidi, escrita entre 1472 i 1482, aproximadament. Així mateix, s’apunten indicis pel que fa a la influència del Raonament de Telamó i Ulisses a les Transformacions. Així, malgrat que Alegre parteix del poema llatí, completa la traducció amb la integració  d’altres fonts que decideix no explicitar (Bonsignori, Corella).
