; We have measured the effect of rat odorant-binding protein 1 on the rates of ligand uptake and liquid-to-air transfer rates with a set of defined odorous compounds. Comparison of observed rate constants (k(obs)) with data simulated over a wide range of different kinetic and thermodynamic regimes shows that the data do not agree with the previously held view of a slow off-rate regime (k(off) <0.0004 s(-1)). We propose that a rapid koff would be a necessary requirement for such a system, since slow odorant-release rates would result in significant decorrelation between the olfactory world and odour perception. A detailed study of the rheological behavior of pectin gels, in the presence of aroma compounds in food concentration is reported. In high methoxylated pectin (HMP) gels, it has not yet been shown if aroma compounds can be responsible for modifications in rheology. Two rheological techniques were used to measure the impact of aroma substances on rheological properties of HMP-based systems. Maximum strain to fracture (sigma F) was compared between flavored and unflavored gels on stress-displacement curve, which was obtained with uniaxial compression until fracture. Occupational hygiene in a Finnish drum composting plant

Bioaerosols (microbes, dust and endotoxins) and volatile organic compounds (VOCs) were determined in the working air of a drum composting plant treating source-separated catering waste. Different composting activities at the Oulu drum composting plant take place in their own units separated by modular design and constructions. Important implication of this is that the control room is a relatively clean working environment and the risk of exposure to harmful factors is low. However, the number of viable airborne microbes was high both in the biowaste receiving hall and in the drum composting hall.
