COMPARISON BETWEEN TWO TYPES OF WINEMAKING TANKS FOR THE PRODUCTION OF QUALITY WINES CV. NERO D’AVOLA

The aim of this work is to compare two types of winemaking tanks, horizontal and vertical, using Nero d’Avola grapes, in order to assess the capacity of extraction of phenolic compounds that determine the quality of red wines. The study shows that in wine made by horizontal winemaking tanks, both anthocyanins and polyphenols have a higher decrease in time compared to wine made by the vertical type. The higher values of polyphenols found in the horizontal type appear to show that wines produced by this type of winemaking tank have a better quality in terms of health for antimicrobial, antioxidant and antiinflammatory properties of these molecules.

Polyphenol Oxidases from Wine Grapes

Wine is produced from grapes which contain enzymes forming unfavorable dark polymers such as melanin, oxidizing proteins, and phenols which may influence their functions. Here we focus on the class of type-3 copper proteins presenting new insights on the structure, the occurrence during the ripening process and during wine making. Then, the reactivity of the enzymes on polyphenols from wine grapes are discussed and the possible consequences on health.

Characterisation of Vernaccia Nera (Vitis vinifera L.) Grapes and Wine

Vernaccia Nera (VN) is a minor Italian red grape cultivar whose oenological properties have not been investigated yet. Traditional winemaking procedures with VN can include grape drying and even triple sequential fermentations, but a rational vinification approach should be based on the grape composition. Since a comprehensive characterisation of the VN grape is still missing, the ripening of VN grapes was monitored by evaluating flavour compounds, proanthocyanidins and anthocyanins. Influence of epigallocatechin gallate and phenolic compounds from green tea on the growth of Oenococcus oeni

Aims:  To investigate the effect of phenolic compounds on the growth of Oenococcus oeni. Methods and Results:  Oenococci are usually grown in media often supplemented with complex additives such as tomato juice. In order to improve our knowledge about the growth requirements of oenococci, we added several juices and leaf extracts such as green tea to the culture media and screened them for growth-stimulating substances to substitute complex supplements such as juices by more defined components. Abstract The aim of this study is evaluate either the antioxidant or pro-oxidant behaviour of some typical polyphenolic compounds of red wine, to investigate the influence of two different pH levels on the antioxidant properties and to clarify their activity–structure relationship. Pyrolysis-gas chromatography-mass spectrometry of cured phenolic resins.

A previously described pyrolysis device with a movable reaction zone was used in the present work for thermal degradation of cured novolac and resol resins. After the pyrolysis the usual major components were identified, as well as relatively low-volatile aromatic compounds which were revealed after their separation in a capillary chromatographic column. Among the latter components, for both types of cured resins, xanthene and its methyl derivatives were found. The isomers of bis(hydroxyphenyl)methane were found in considerable quantities only in the case of partially cured novolac resins which contained any linear sequences in their structure.

Les phénols de la lignine et le 13C, traceurs de l'origine des matières organiques du sol

Abstract In spodosols of Gascony (France), conversion of maritime pine stands into maize cropping leads to an incorporation of maize organic matter, which changed the isotopic (δ13C) and phenolic signature in A and L horizons of soil. Hydrolysis of phenol lignin in forests and cultivated soils showed the predominance of vanillic units under forest and the early but moderate incorporation of cinnamic acids. Incorporation of syringic units appeared higher, related to a large maize production of stable syringic phenols. Syringic units represented a long-term marker of maize inputs in soils, whereas vanillic units revealed the degradation of forest organic matter.
