Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). Study of relationships between the structure of aroma compounds and their retention-release between vapour phase and dairy gels

An integrated approach physicochemistry and structures activity relationships has been carried out to study the aroma compounds retention-release phenomenon in a fat free dairy gel added with pectin. This study aimed to identify the molecular properties that govern this phenomenon assuming that modifying the structure leads automatically to a change in the retention-release of aroma compounds. For this purpose, we have determined the partition coefficients of 28 aroma compounds in water, in pectin gels and in dairy gels supplemented or not supplemented with pectin, at equilibrium conditions using the PRV method (Phase Ratio Variation). Hugh MacDiarmid is considered the most important Scottish poet of the 20th century. He is mostly celebrated for the Scots lyrics he wrote in the 1920s and his long poem A Drunk Man Looks at the Thistle, published in 1926. Because of their fragmentation, the poems of the Thirties, most of which were part of the unpublished project Mature Art, and In Memoriam James Joyce (1955), have not attracted the same critical attention. However, they represent the culmination of a very complex stylistic crisis that this study offers to analyse thanks to the question of bonds, especially problematic bonds.
