Understanding physiological and physicochemical influences on in-mouth aroma release from yogurts using mechanistic modelling

2008

International audience; On the basis of a first mechanistic model predicting aroma release in the oropharynx during food consumption, the aim of the present work was to improve its accuracy and to use it to identify the main mechanisms responsible for in-mouth aroma release. Comparison between predicted release kinetics and the ones measured by APCI-MS in the nasal cavity of subjects eating flavoured yogurt highlighted the reasonably accurate time predictions of the relative aroma concentration in the nasal cavity and the model ability to simulate successive swallowing events as well as partial velopharyngeal closure. Parameters identified as the most influent for in-vivo aroma release were…

Hydrophobic interactions between aroma compounds and beta-Lactoglobulin using NMR and a fluorescent probe

2010

International audience; beta-lactoglobulin (bLg) is known to interact with aroma compounds affecting their release, and hence, their perception. bLg, composed of two hydrophobic binding sites, was used as a simple model food protein to investigate binding mechanisms as a function of ligand nature. Indeed, binding of small ligands to bLg sites is often selective, although some ligands bind to both sites. Interactions between bLg and one ketone, beta-ionone, and one phenol, guaiacol were investigated by combining two techniques: 2D Nuclear Magnetic Resonance for binding site location, and fluorescence using the 6-propionyl-2-(N, N-dimethylamino)naphthalene (PRODAN) probe for surface hydrophob…

Indennità da licenziamento illegittimo e deduzione dell'aliunde perceptum e dell'aliunde percipiendum

2022

PICTURES, GESTURES AND DISCOURSES: A CASE STUDY WITH KINDERGARTEN STUDENTS DISCOVERING LEGO BRICKS

The awareness of the importance to look, through a mathematical lens, to the children drawings, gestures and discourses, considering them as diagnostic tools for the mathematics competences, stays at the base of this contribution. It discusses a didactic experience conducted in a Kindergarten (students 5 or 6 years old) in which we asked children to represent and discus a Lego block with a drawing and speech, observed from different prospective. The discussed results seem to us interesting both for researchers in Mathematics Education and for Kindergarten teachers who want to deepen the role of drawing and gestures as an expressive and diagnostic forms to analyze students’ knowledge, abilit…

influence of raw data analysis for the use of neural networks for wind farm productivity prediction

2011

In the last decade wind energy had a strong growth because of cost effectiveness of the technology and the high remunerative of investments. The increase of wind power penetration in power grids, however, makes necessary the development of instruments for prediction of productivity of a wind farm. This paper presents a study dealing with the capability of neural network to forecast short term production of a wind farm by the correlation of wind and energy production data. Available measures of wind parameters were related to productivity data of a real wind farm. Also wind data not strictly related to the site have been used in order to assess their possible influence on the production. Aft…

Performing arts and mediation technology in the period of lockdown

2021

Advancements in digital technologies have become novel ways to enrich communication, expression, and transmission of arts knowledge. Technology is increasingly implemented in the performance space, as a source of inspiration for artists. Especially in this period of lockdown, mediation technology has turned out to be an essential tool for different aspects of social life, as in performing arts. With venues, schools and artistic activities closed, performers, students and spectators have been obliged to keep connecting in remote conditions. This article wants to retrace the aesthetic impact of mediation technology in performing arts during this period of lockdown by focusing on the aspects t…

The goal is to illustrate the potentialities as well as the challenges of the arttechnology encounter by underlining the transformation of the interaction with and perception of the performance space in remote conditions and in distance learning. The implementation of digital technologies is contributing to the evolution of the performing arts sector by facilitating futuristic approaches. 402 412mediation technology has turned out to be an essential tool for different aspects of social lifeas in performing arts. Dimensions of the Relationship between the Individual and Her Unique Worldview Construction

2021

Each individual constructs his own private worldview using elements from established worldview traditions. The biographical character of this formation makes this the individual’s “Unique Worldview Construction” (UWC). The purpose of this theoretical study is to analyse the dynamic relationship between the individual and her own UWC. It describes more how than what he believes in or denies. The variation is exceedingly complex. To make it accessible, the complexity is crystallized into seven dimensions: (1) The authority structure deals with the individual’s perception of herself as being superordinate/subordinate to her own UWC. (2) The importance dimension analyses the span from indiffere…
