Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). The design of water treatment plants requires simultaneous analysis of technical, economic and environmental aspects, identified by multiple conflicting objectives. We demonstrated the advantages of an interactive multiobjective optimization (MOO) method over a posteriori methods in an unexplored field, namely the design of a biological treatment plant for drinking water production, that tackles the process drawbacks, contrarily to what happens in a traditional volumetric-load-driven design procedure. Crystal growth kinetics in deionised two-component colloidal suspensions

We report first measurements of the crystal growth velocity in deionised two-component aqueous suspensions of charged polystyrene latex spheres. The size ratio was 1:1.3 and mixing ratios up to 18% of the larger particle were investigated. For the pure components limiting growth velocities of (V ∞,120 = 4.8 µm s−1 and V ∞,156 = 2.9 µm s−1) were observed. In the mixture v drops with increasing mixing ratio even below (V ∞,156) of the large minority component. Careful monitoring of the deionisation procedure excludes the explanation of enhanced ionic contamination. Alternatives based on the kinetics of particle attachment and the position of the phase boundary are discussed.

A microfluidic synthesis of stimuli-responsive actuating Janus particles composed of a liquid crystalline elastomer (LCE) and a polymeric hydrogel is reported. , In this article the microfluidic synthesis and characterization of micrometer sized actuating Janus particles containing a liquid crystalline elastomer (LCE) is presented. Special needs and characteristic features of (photo)catalytic reactors with a review of the proposed Solutions

Abstract In the present chapter, the analogies between photocatalytic systems and the systems where the more common thermally activated reactions take place are highlighted. The objective is to propose a unified approach for the analysis and the design, which, however, must take into account how and why photocatalytic reactors differ from reactors with thermal reactions. The necessity of absorbing photons to activate the photocatalytic process adds complexity to the system, but some approaches are presented to simplify the problems and make easier their solution.
