In the last decades, in Europe large agricultural areas have been abandoned. In absence of disturbance factors, renaturation of these areas is rapid due to secondary succession of vegetation communities. In the Mediterranean region, in the last years have been conducted studies on soil carbon accumulation after agricultural abandonment. Aim of this study was to evaluate the effects of grazing on Trifolium subterraneum and Lolium multiflorum, as pure or associated crops, on the chemical composition and on the fatty acid profile of the intramuscular lipids of the meat of lambs. Rangelands in SW Spain constitute the most extensive ranching system on the Iberian Peninsula. During the last few decades, a significant increase in livestock numbers, along with a progressive substitution of cattle for sheep, have led to land degradation processes such as the reduction of grass cover and increased soil compaction in heavily grazed areas.
