International audience; Aerial parts of Artemisiaarborescens were collected from different sites of the Mediterranean area (southwestern Algeria and southern Italy) and the chemical composition of their essential oil (EO) extracted by hydrodistillation was studied by both gas chromatography (GC) equipped with an enantioselective capillary column and GC/mass spectrometry (GC/MS). The EOs obtained were tested against several Listeriamonocytogenes strains. Using GC and GC/MS, 41 compounds were identified, accounting for 96.0-98.8% of the total EO. The aim of this work was to study the effects of interindividual variability of human elderly saliva on aroma release and metabolization by ex vivo approaches. Thirty individuals suffering or not from hyposalivation were selected from a panel formed by 110 elderly people (aged >65 years old) that were matched by age and sex. Then, their stimulated saliva samples were independently incubated in presence of three aroma compounds (ethyl hexanoate, octanal, 2-nonanone) to perform headspace-gas chromatography and liquid/liquid extraction-gas chromatography mass spectrometry analyses. Clary sage (Salvia sclarea L.), known for its aromatic and medicinal properties, belongs to the Lamiaceae family. Although the species grows wild throughout Sicily, knowledge of its production and qualitative properties is limited. The aim of this study was to evaluate the agronomic behavior of the species over two years of testing and to characterize the chemical properties of its wild counterparts in order to identify the most promising accessions for cropping or for use in breeding programs. Physicochemical properties of vanilla and raspberry aromas microencapsulated in the industrial conditions by spray drying

International audience; Physicochemical properties of powdered vanilla and raspberry complex aromas obtained on industrial conditions by spray drying were investigated. Powders had low water content and activity, promoting long shelf‐life. Aroma retention was lower for vanilla flavors. Raspberry powdered flavors had poorer flowability, lower bulk density, lower particle size, and higher Tg. Extraction of benzaldehyde from fermentation broth by pervaporation

Abstract The application of pervaporation to extract benzaldehyde produced by microorganisms is considered. A model system was used to study the influence of different parameters and attempts to understand better the mass transfer of this flavour compound. Benzaldehyde was removed from a culture medium from which it was produced by Bjerkandera adusta . The performance of these processes is compared.
