Recent advances in the application of microbial transglutaminase crosslinking in cheese and ice cream products: A review

Microbial transglutaminase (MTGase) has been currently utilized to form new food structures and matrices with high physicochemical stability. Incorporation of this multi-functional enzyme into structural composition of milk protein-based products, such as cheese and ice cream, can not only be a successful strategy to improve their nutritional and technological characteristics through intramolecular cross-linking, but also to reduce the production cost by decreasing fat and stabilizer contents. Impact of electron beam irradiation on fish gelatin film properties

International audience; The objective of this work was to display the effect of electron beam accelerator doses on properties of plasticized fish gelatin film. Electron spin resonance indicates free radical formation during irradiation, which might induce intermolecular cross-linking. Tensile strength for gelatin film significantly increases after irradiation (improved by 30% for 60 kGy). The vapour permeability is weakly affected by irradiation. Surface tension and its polar component increase significantly and are in accordance with the increase of wettability. Coupling tyrosol, quercetin or ferulic acid and electron beam irradiation to cross-link chitosan–gelatin films: A structure–function approach

International audience; Marine industry by-products, chitosan and fish gelatin, entrapping natural antioxidants (ferulic acid, quercetin and tyrosol) were used to prepare edible active films by casting. Distributed $n$-player approachability and consensus in coalitional games

We study a distributed allocation process where, at each time, every player: i) proposes a new bid based on the average utilities produced up to that time, ii) adjusts such allocations based on the inputs received from its neighbors, and iii) generates and allocates new utilities. The average allocations evolve according to a doubly (over time and space) averaging algorithm. We study conditions under which the average allocations reach consensus to any point within a predefined target set even in the presence of adversarial disturbances. Triggering a transient organo-gelation system in a chemically active solvent

A transient organo-gelation system with spatiotemporal dynamic properties is described. Here, the solvent actively controls a complex set of equilibria that underpin the dynamic assembly event. The observed metastability is due to the in situ formation of a secondary solvent, acting as an antagonist against the primary solvent of the organogel. peerReviewed

Diimidazolium-based organic salts, bearing peptides or amino acids as anions have been synthesised and tested for their gelling ability in biocompatible solvents. These low molecular weight salts were successfully used as gelators in phosphate buffered saline (PBS) solution and ionic liquids. Arsenite-induced aneuploidy following short and long-term exposure in mammalian cells

We studied the long-term progression of chromosomal instability in V79 cells treated acutely with arsenite (10mM, 24 hr) followed by growth in arsenic-free medium for 120 cell generations. Indirect immunostaining using anti-ß-tubulin antibody showed severe alterations in spindle morphology after only 6 h treatment and cytogenetic investigations carried out at the end of treatment revealed that the percentage of cells with 21 chromosomes (modal number of the cell line) decreased, making way for aneuploid cells.
