Effects of almond gum as texture and sensory quality improver in wheat bread

International audience; The aim of this work was to investigate the effect of almond gum as dietary fibre source in enhancing the wheat bread quality. Different amounts of almond gum (2%, 5% and 10% (w/w)) were used in bread formulation. The volume, texture, crust and crumb colour, as well as the sensorial properties, were evaluated and compared to control (without almond gum). The obtained results showed that almond gum addition enhanced significantly the volume of bread. The highest volume was obtained using 2% almond gum concentration with 23.6% increase, compared to control. Context-dependent coloration of prey and predator decision making in contrasting light environments

A big question in behavioral ecology is what drives diversity of color signals. One possible explanation is that environmental conditions, such as light environment, may alter visual signaling of prey, which could affect predator decision-making. Here, we tested the context-dependent predator selection on prey coloration. Colour and luminance contrasts predict the human detection of natural stimuli in complex visual environments.

Much of what we know about human colour perception has come from psychophysical studies conducted in tightly-controlled laboratory settings. An enduring challenge, however, lies in extrapolating this knowledge to the noisy conditions that characterize our actual visual experience. Here we combine statistical models of visual perception with empirical data to explore how chromatic (hue/saturation) and achromatic (luminant) information underpins the detection and classification of stimuli in a complex forest environment. To compare mental versus integrated models explanations of syllogistic reasoning, we administered a multiple-choice questionnaire containing 19 pairs of syllogistic premises with valid conclusions (given in a C-A order) to 72 psychology undergraduates. Association between our integrated models classification and the empirical difficulty of items was strong.

In 2009–2011, 1153 participants from the 3 Cities Study, aged 75 years or more, had an initial eye examination. The present research aimed at determining the optimal conditions for the lactic acid fermentation of green Spanish-style table olives. The work is a follow-up, and focuses on the performance of the commercial starter strain Lactobacillus pentosus OM13 by applying an acclimatization step and the addition of nutrients, and concentrations of lactic acid that were previously investigated.
