Efficacy of Ozonation Treatments of Smoked Fish for Reducing Its Benzo[a]pyrene Concentration and Toxicity

Ozone is widely used in food processing, for example, to decompose mycotoxins or pesticide residues, to extend the shelf life of products, and for sanitation. The objective of this study was to assess the possibility of expanding the application of ozone for oxidative degradation of polycyclic aromatic hydrocarbons (PAHs). The evaluation was conducted by ozonation of a benzo[a]pyrene (BaP) standard solution and smoked fish (sprats) contaminated with PAHs. The effect of ozonation was immediate in the BaP solution; 89% of this toxic compound was decomposed after only 1 min of treatment. However, the impact of ozonation on the smoked sprats was less pronounced, even after prolonged treatment. …
Effect of storage period under variable conditions on the chemical and physical composition and colour of Spanish refrigerated orange juices

The effects of the physicochemical and quality characteristics of various minimally pasteurized refrigerated orange Spanish juices and their changes with storage time and temperature were investigated. Essential oils, acidity, conductivity, diacetyl index, hydroxymethylfurfural, formol index, viscosity and ascorbic acid varied with storage time more significantly at 10 degrees C than at 4 degrees C. Density, colour and pectinmethylesterase did not vary at 4 degrees C. Some of the parameters could be used as indicators of quality loss or spoilage of the juices. Se realizó un estudio taxonómico de los hidrozoos de la familia Aglaopheniidae colectados sobre fondos blandos del Caribe colombiano entre 20 y 500 m de profundidad en marzo de 2001 por la expedición INVEMAR MACROFAUNA II. Fueron encontrados dos géneros y seis especies destacándose Aglaophenia elongata, A. lophocarpa y A. tridentata como nuevos registros para aguas colombianas y además se amplió la distribución batimétrica de Aglaophenia latecarinata y A. tridentata. Shelf life assessment of industrial durum wheat bread as a function of packaging system

This study compared the effect of different packaging systems on industrial durum wheat bread shelf-life, with regard to thermoformed packaging (TF) and flow-packaging (FP). Two TFs having different thickness and one FP were compared by assessing physico-chemical and sensorial properties and volatile compounds of sliced bread during 90 days of storage. Texture, aw and bread moisture varied according to a first-order kinetic model, with FP samples ageing faster than TFs. Quality and shelf-life of whole and filleted Coryphaena hippurus, stored with modified atmosphere packaging (MAP) and natural antioxidants from halophytes (HAL), were investigated. Fillets were divided into control, simply sealed in trays; MAP, preserved by modified atmosphere (45% CO2, 50% N-2, 5% O-2); and MAP-HAL, pretreated with antioxidants and preserved by MAP. HPLC profile and evolution during storage of triglycerides and diglycerides in virgin olive oils

High-performance liquid chromatography has been used for determining the triglyceridice and diglyceridice composition of olive oils from main, minor and neglected Sicilians cultivars. The HPLC analysis has allowed the identification and the quantification of 16 triglycerides. Among these, OOO, POO+SOL, OOL and POL, have shown a content higher than 84% of the total area of peaks in the chromatographic profile. Dioleine (OO) and oleopalmitine (OP) resulted the most representative diglycerides.
