Sensory and chemical drivers of wine minerality aroma: An application to Chablis wines

The goal of this work was to evaluate the effect of vineyard position on the minerality of wines and to establish relationships between minerality scores, sensory descriptors and chemical composition. Sensory analyses included minerality rating and free description performed by wine professionals under two conditions: orthonasal olfaction alone and global tasting. Chemical characterization included analysis of major and minor volatile compounds, volatile sulphur compounds, mercaptans, metals, anions and cations. A number of smell tests designed to evaluate human olfactory capabilities have been published, but none have been validated cross-culturally. The aim of this study was therefore to develop a reliable and quick olfactory test that could be used to evaluate efficiently the olfactory abilities of a European population. Smelling in the old age

Several authors argued that ageing is accompanied by an impairment of olfactory abilities, i.e., the ability to perceive an odour or a taste. However, beyond this overall effect of age on chemosensory abilities, ageing is accompanied by variability in olfactory performance: the decline of odour perception with age is not uniform across odorants neither across elderly individuals. Decline in odour perception may not be inevitable to the aging individual and that factors secondary to aging, such as poor health status or cognitive decline, may contribute to deficits in odour detectability beyond the age effect per se.

Rapid odorant release in mammalian odour binding proteins facilitates their temporal coupling to odorant signals.

 ; We have measured the effect of rat odorant-binding protein 1 on the rates of ligand uptake and liquid-to-air transfer rates with a set of defined odorous compounds. Comparison of observed rate constants (k(obs)) with data simulated over a wide range of different kinetic and thermodynamic regimes shows that the data do not agree with the previously held view of a slow off-rate regime (k(off) <0.0004 s(-1)). We propose that a rapid koff would be a necessary requirement for such a system, since slow odorant-release rates would result in significant decorrelation between the olfactory world and odour perception. Effect of oxidoreduction potential on aroma biosynthesis by lactic acid bacteria in nonfat yogurt

 ; The aim of this study was to investigate the effect of oxidoreduction potential (Eh) on the biosynthesis of aroma compounds by lactic acid bacteria in non-fat yogurt. The study was done with yogurts fermented by Lactobacillus bulgaricus and Streptococcus thermophilus. The Eh was modified by the application of different gaseous conditions (air, nitrogen, and nitrogen/hydrogen). Acetaldehyde, dimethyl sulfide, diacetyl, and pentane-2,3-dione, as the major endogenous odorant compounds of yogurt, were chosen as tracers for the biosynthesis of aroma compounds by lactic acid bacteria. Symptomatic bodies: reading and writing the odor of sanctity in French culture (1868-1901)

Using examples from novels by the Goncourt brothers, Huysmans, Zola and Lemonnier, this paper explores the literary representation of the odor of sanctity in regard to the main epistemological discourses of the second half of the 19th century. In this deeply anticlerical intellectual context, the Christian myth of the odor of sanctity is analyzed by medical professionals and scientists as a pathological phenomenon. Although taking into account the divergent aesthetics of the selected authors, the study focuses mostly on the ambiguity literary texts maintain between the unspeakable experience of religious ecstasy and a symptomatic vision of the body.
