The homologous C-terminal repeats of Clostridium difficile toxins (ToxA and ToxB) and streptococcal glucosyltransferases appear to mediate protein-carbohydrate interactions at cellular binding sites with sugar moieties as substrates. A consensus sequence of 134 repeating units from gram-positive bacteria indicates that these repeats have a modular design with (i) a stretch of aromatic amino acids proposed to be involved in the primary carbohydrate-protein interaction, (ii) an amplification of this interaction by repetition of the respective sequences, and (iii) a second domain, not characterized, that is responsible for carbohydrate specificity.

‘Sobrasada’ is a raw-cured product typical of Mallorca (Balearic Islands). Throughout its ripening process the product, like other raw-cured sausages, undergoes a series of chemical and microbial changes which lead to the formation of its desirable final characteristics. In the ‘sobrasada’ studied, the breeds, feeding and casings used in the Balearic Islands were employed. The evolution of different groups of microorganisms was followed: mesophylic aerobic microorganisms, lactic acid bacteria, Enterobacteriaceae, yeasts and moulds, group D Streptococcus, proteolytic microorganisms and lipolytic microorganisms. International audience; VetPath is an ongoing pan-European antimicrobial susceptibility monitoring programme collecting pathogens from diseased cattle, pigs and poultry not recently treated with antibiotics. Non-duplicate isolates (n = 1244) were obtained from cows with acute clinical mastitis in eight countries during 2015-2016 for centrally antimicrobial susceptibility testing according CLSI standards. Among Escherichia coli (n = 225), resistance was high to ampicillin and tetracycline, moderate to kanamycin and low to amoxicillin/clavulanic acid and cefazolin. Objectives. This study examined counselling communication activities that were used for assessing schoolchildren's need for change of snacking habits. In addition, the schoolchildren's assessment of their need for change was explored after a follow-up year (2002–2003). Material and methods. The follow-up research data included 66 counselling sessions in 2002 and 31 counselling sessions in 2003, with 31 schoolchildren. The sessions were conducted by four dental hygienists. ABSTRACT Accumulation of biogenic amines (BAs) in cheese and other foods is a matter of public health concern. The aim of this study was to identify the enzyme activities responsible for BA degradation in lactic acid bacteria which were previously isolated from traditional Sicilian and Apulian cheeses. The selected strains would control the concentration of BAs during cheese manufacture. First, 431 isolates not showing genes encoding the decarboxylases responsible for BA formation were selected using PCR-based methods.
