The effect of yeasts on wine flavor response is of primary importance. The genus Saccharomyces, and mainly the species Saccharomyces cerevisiae, is responsible for alcoholic fermentation. Recently, several novel yeast isolates from wines have been described as hybrid yeasts between S. cerevisiae x S. kudriavzevii. We have analyzed their influence on two grape musts (Macabeo and Tempranillo) in fermentations conducted at four different temperatures (14, 18, 22 and 32 degrees C) by studying volatile compound production, sugar assimilation and other characteristics influencing the enological properties of wine caused by the impact of yeast. Physicochemical and sensory fruit characteristics of two sweet cherry cultivars after cool storage

Physicochemical and sensory fruit characteristics were studied to assess the effects of cool storage on quality attributes of sweet cherries of the Sciazza variety, widespread in the Campania region and Ferrovia variety, marketed in Italy and abroad. The major sugar and organic acid constituents, anthocyanin composition, colour (CIE L*, a*, b*), firmness, volatile neo-formation compounds (acetaldehyde, ethanol and methanol) and sensory attributes were determined at harvest and after 15 days of fruit storage at 1 degreesC and 95% RH. Effect of sodium borohydride and hydrogen peroxide pretreatments on soda pulping of sugar maple (Acer saccharum)

For recovering value-added wood-based organic material prior to delignification, sodium borohydride (NaBH4) and hydrogen peroxide (H2O2) pretreatments under alkaline conditions were performed before soda pulping of sugar maple (Acer saccharum) chips with sodium hydroxide (NaOH). In this investigation, it was determined whether the pulp yield could be increased by partly stabilizing the hemicelluloses by these pretreatments, and simultaneously obtains lower pulp kappa numbers. Preparation of Highly Clarified Anthocyanin-Enriched Purple Sweet Potato Juices by Membrane Filtration and Optimization of Their Sensorial Properties

The aim of this work was to prepare clarified anthocyanin-enriched juices from purple sweet potatoes (PSP) and to evaluate their sensorial properties, with promising prospect for antioxidant molecules. Four PSP juice samples were prepared and annotated as (1) crude PSP extract, (2) PSP extract followed by microfiltration, (3) by ultrafiltration and (4) by nanofiltration (4). Rat mammary-gland transferrin: nucleotide sequence, phylogenetic analysis and glycan structure

The complete cDNA for rat mammary-gland transferrin (Tf) has been sequenced and also the native protein isolated from milk in order to analyse the structure of the main glycan variants present. A lactating-rat mammary-gland cDNA library in lambda gt10 was screened with a partial cDNA copy of rat liver Tf and subsequently rescreened with 5′ fragments of the longest clones. This produced a 2275 bp insert coding for an open reading frame of 695 amino acid residues. The Antarctic yeast Candida sake: Understanding cold metabolism impact on wine

Current winemaking trends include low-temperature fermentations and using non-Saccharomyces yeasts as the most promising tools to produce lower alcohol and increased aromatic complexity wines. Here we explored the oenological attributes of a C. sake strain, H14Cs, isolated in the sub-Antarctic region. As expected, the cold sea water yeast strain showed greater cold growth, Na+-toxicity resistance and freeze tolerance than the S. cerevisiae QA23 strain, which we used as a commercial wine yeast control.
