<p style="text-align: justify;">Plusieurs accidents appelés « goûts de lumière » ou « goûts de réduit » ont été observés dans les vins de champagne au cours de ces dernières années. Dans ce travail, nous avons mis au point une méthode d'appréciation de ces goûts par dosage des groupements thiols ou mercaptans dans les vins. 2:1 complexes of pyridine-2(1H)-thione (LH) with manganese(II) were prepared: (LH)2MnCl2, (LH)2MnBr2 and [L2Mn]n. The polymeric chain structure of [L2Mn]n contains a distorted octahedrally coordinated manganese (MnN2S4) with chelating ligands, the N-atoms are in cis positions and the S-atoms of the pyridine-2-thiolates bridging; crystallographic data for [C10H8MnN2S2]n: space group C2/c (monoclinic), and R1 = 0.0571 for 1326 reflexes with Fo4σ(Fo).
Production of sulfur flavors by ten strains of Geotrichum candidum

ABSTRACT Ten strains of Geotrichum candidum were studied on a liquid cheese model medium for the production of sulfur compounds which contribute to the aroma of cheeses. The volatile components produced by each cultured strain were extracted by dynamic headspace extractions, separated and quantified by gas chromatography (GC), and identified by GC-mass spectrometry. It was shown that four strains of this microorganism produced significant quantities of S -methyl thioacetate, S -methyl thiopropionate, S -methyl thiobutanoate, S -methyl thio iso butanoate, S -methyl thio iso valerate, and S -methyl thiohexanoate. The electrochemical reduction of D,L-homocystine hydrochloride to the corresponding cysteine was performed in a batch continuous recirculation reaction system that was equipped with a FM01-LC electrochemical reactor. Electrolyses were performed under amperostatic conditions, using carbon felt cathodes and DSA anodes divided by Nafion 324 cationic membranes. Three polymeric group 11 transition metal polymers featuring metallophilic interactions were obtained directly via self-assembly of metal ions and 4-pyridinethiol ligands. In the cationic [Cu2(S-pyH)4]n2+ with [ZnCl4]n2− counterion (1) and in the neutral [Ag(S-py) (S-pyH)]n (2) 4-pyridinethiol (S-pyH) and its deprotonated form (S-py) are coordinated through the sulfur atom. TTF- and exTTF-containing [(μ-S2)Fe2(CO)6] complexes have been prepared by the photochemical reaction of TTF or exTTF and [(μ-S2)Fe2(CO)6]. These complexes are able to interact with PAHs. In the absence of air and in acid media an electrocatalytic dihydrogen evolution reaction (HER) occurs, similarly to analogous [(μ-S2)Fe2(CO)6] complexes. However, in the presence of air, the TTF and exTTF organic moieties strongly influence the electrochemistry of these systems. The reported data may be valuable in the design of [FeFe] hydrogenase mimics able to combine the HER properties of the [FeFe] cores with the unique TTF properties

In a project designed to investigate the specific and infraspecific taxa of Matthiola endemic to Sicily (Italy) as new potential sources of bioactive compounds in this work, the infraspecific taxa of Matthiola fruticulosa were studied, namely, subsp. fruticulosa and subsp. coronopifolia. HPLC–PDA/ESI–MS and SPME–GC/MS analyses of hydroalcoholic extracts obtained from the aerial parts of the two subspecies led to the detection of 51 phenolics and 61 volatile components, highlighting a quite different qualitative–quantitative profile. The peroxisomal beta-oxidation system consists of four steps catalysed by three enzymes: acyl-CoA oxidase, 3-hydroxyacyl-CoA hydratase/3-hydroxyacyl-CoA dehydrogenase (multifunctional enzyme) and thiolase. In humans, thiolase activity is encoded by one gene, whereas in rodents, three enzymes encoded by three distinct genes (i.e. thiolase A, thiolase B and SCP2/thiolase) catalyse the thiolase activity. In this paper, studies on electrospray ionisation ion trap mass spectrometry of organophosphates are extended to a series of dimethyl methylphosphono and trimethyl phosphoro thionates and thiolates and some deuterated isotopomers. Of particular, interest is the comparison of the collision-induced fragmentation of ions from these compounds with those of the non-sulphur containing analogues reported previously.
