In 2004 and in 2008, the author conducted ethnographic research in Catania (Southern Italy) on one of the most important religious feasts in honor of Saint Agatha. This chapter relates Agatha's story, which is that of a Sicilian virgin martyr persecuted in the fourth century by a Roman proconsul. At the feast of St. Agatha, the three elements: the extra-ecclesial nature of popular religiosity, the transmission of knowledge through vehicles other than seminaries and other official religious institutions, and the expression of popular religiosity with signs and symbols that transmit the presence of the supernatural in everyday life, can be found. In the first book of De Rerum Natura, Lucretius describes his didactic undertaking as a metaphorical process of gift exchange (1.50-53): the obscure and salvific precepts of Epicurean philosophy, skilfully arranged in hexameters, are said to be 'gifts' (dona) that the poet has prepared with loyal zeal (studio fideli). Such a suggestive depiction of Lucretius' relationship to the work's dedicatee, Gaius Memmius, seems to reflect a relevant functional pattern of De Rerum Natura as a coherent system of communication strategies, variously readapting social models and cultural traditions. Este trabajo relaciona el retablo encargado por fray Bonifacio Ferrer (1355-1417) para la capilla de la Santa Cruz en la cartuja de Portaceli con dos acontecimientos de relevancia pública en los que estuvo envuelto y que marcaron su trayectoria personal y política. Understanding the release and metabolism of aroma compounds using micro-volume saliva samples by ex vivo approaches

International audience; This study investigated the behaviour of key aroma compounds in the presence of human saliva (200 mu L) from different individuals (n = 3) submitted or not to centrifugation (whole vs clarified saliva). HS-GC results showed that human saliva strongly decreased the release of carbonyl compounds (aldehydes and ketones). This effect was dependent on i) the structure of the aroma compounds and ii) the saliva composition. Whole saliva exerted a higher effect than clarified saliva on aroma compounds. Moreover, this effect was individual-dependent and related to the total protein content and the total antioxidant capacity of saliva. HS-SPME and LLE-GC/MS analyses revealed t…
