Full inhibition of enzymatic browning in the presence of thiol-functionalised silica nanomaterial

[EN] Darkening processed fruits and vegetables is caused mainly by enzymatic browning through polyphenol oxidase (PPO) action. Accordingly, we explored the potential of four silica-based materials (MCM-41 nanometric size, MCM-41 micrometric size, UVM-7 and aerosil), non-functionalised and functionalised with thiol groups, to inhibit PPO activity in the model system and apple juice. All materials showed relevant performance when immobilising and inhibiting PPO in model systems, and support topology is a main factor for enzyme immobilisation and inhibition. Influence of the functionalisation of mesoporous silica material UVM-7 on polyphenol oxidase enzyme capture and enzymatic browning

Polyphenol oxidase (PPO), also known as tyrosinase and catechol oxidase, is the enzyme responsible for enzymatic browning in foods. It causes undesirable organoleptic, nutritional and colour changes. Here, we report the preparation of five nanomaterials and a study of their ability to modulate PPO enzyme activity. The materials consist of UVM-7 supports (a mesoporous silica material) modified with diverse functional groups (i.e. amine, carboxylic acid, isocyanate, alkane and pyridine). Mindfulness Training for Children with ADHD and Their Parents: A Randomized Control Trial

Objective: The aim of this randomized control trial is to analyze the efficacy of a Mindfulness-based program (MYmind) in improving ADHD symptoms, associated problems, executive functions, and family functioning. Method: The sample was composed of 30 children (9–14 years old) with an ADHD diagnosis and their parents. Participants were randomized into two groups, the MYmind group ( n = 15) and a wait-list group ( n = 15). Dielectric Characterization of Fruit Nectars at Low RF Frequencies

Dielectric properties of apple, apricot, peach, and pear nectars were studied in the frequency range from 15 kHz to 30 MHz and the temperature range from 25 to 60 degrees C. Both the relative dielectric constants and the dielectric loss factors decreased by increasing frequency and increased linearly with increasing temperature with values in the order 10(4)-10(2) and 10(5)-10(2), respectively. The power dissipation densities and the power penetration depths were found to increase linearly with temperature. Alcohol drinking is highly prevalent in many cultures and contributes to the global burden of disease. Los prejuicios no percibidos y el caso Sócrates: un ejemplo paradigmático

En un trabajo anterior defendimos que no se había prestado suficiente atención al procedimiento utilizado en el juicio contra Sócrates, sin que examináramos las causas de esa desatención. Ahora, tras analizarlas, llegamos a la conclusión de que ese procedimiento se habría malentendido completamente al haberse implementado un prejuicio no percibido. Habríamos extrapolado a ese procedimiento los presupuestos individualistas de los procedimientos vigentes hoy en día y, en consecuencia, habríamos estado sordos a lo que nos dice la tradición. Testing the stage-discharge relationship of a sharp crested sluice gate deduced by the momentum equation for a free-flow condition

Abstract In this paper the stage-discharge relationship of a sharp crested sluice gate is deduced by applying the momentum equation for a free flow condition. The theoretically deduced stage-discharge formula was then calibrated using experimental flume data obtained in previous investigations carried out for a free-flow condition. The deduced stage–discharge relationship is characterized by a momentum coefficient which is empirically estimated by the ratio between the height of the orifice and the water depth in the section upstream the gate. The relative errors are always less than or equal to - 10% to +10% and 71.4% of the errors are less than or equal to ± 2%.

Byssochlamys nivea inactivation in pineapple juice and nectar using high pressure cycles

The aim of this work was to assess the inactivation of Byssochlamys nivea ascospores in pineapple juice and nectar by combining pressure sequences involving high pressure cycles with relatively mild thermal processing. The effect of 550 and 600 MPa sustained pressures (holding time of 15 min), combinations of sustained pressures and pressure pulses (holding time of 10 s), and pressure cycles (two, three and five cycles of 550 and 600 MPa for 7.5, 5 and 3 min, respectively), at 20, 40, 60, 70, 80 and 90 °C were compared.
