Background: the ketogenic diet (KD) has become a widely used nutritional approach for weight loss. Some of the KD’s positive effects on metabolism and cardiovascular risk factors are similar to those seen after n-3 polyunsaturated fatty acids (ω-3) supplementation. We hypothesized that a ketogenic Mediterranean diet with phytoextracts combined with ω-3 supplementation may have increased positive effects on cardiovascular risk factors and inflammation. Treatment options for managing atherogenic dyslipidemia and fatty liver disease

Non-alcoholic fatty liver disease (NAFLD) is the most common cause of chronic liver disease in Western countries with up to 30% of the population affected. Since NAFLD is associated with an increased risk of cardiovascular (CV) disease, these patients should be stratified for CV risk factors, including atherogenic dyslipidemia, and managed accordingly. Lifestyle modifications represent an effective treatment for NAFLD, since most patients are overweight or obese. 18:2Δ 9c,12t and 18:2 Δ9t,12c are present in our diet, as result of heat treatment of vegetable oils. A nutritional study was carried out in order to obtain more precise information on the conversion of these two isomers into long chain polyunsaturated fatty acids (PUFA) by rat tissues. This in vivo study performed using rat fed with small quantities of mono trans linoleic acid isomers (0.6% of total energy) showed that 18:2 Δ9c,12t was converted into 20:4 Δ5c,8c,11c,14t while 18:2 Δ9t,12c was only slightly converted into 20:4 Δ5c,8c,11t,14c. Role of sodium nitrite on phospholipid composition of cooked cured ham. Relation to its flavor

Abstract The role of sodium nitrite on phospholipid composition was studied during the processing of cooked cured ham. Evolution of the different classes of phospholipids in raw meat, cured meat with brine injected at 0, 50 and 100 mg of sodium nitrite/kg meat, and cooked meat, was determined as well as fatty acid content of phosphatidyl choline and phosphatidyl ethanolamine in raw and cooked meat. The major effect of sodium nitrite was observed on phosphatidyl ethanolamine whose content was significantly lowered in the presence of this salt. Abstract The effect of supercritical carbon dioxide (SC-CO2) (10–40 MPa) and conventional extraction (CE) to recover oil from by-products obtained during “horchata” production was assessed. To evaluate both extraction techniques, the fatty acid composition, polyphenols, α-tocopherol, antioxidant capacity and lipid oxidation parameters of the extracts obtained were analysed. A linear relationship between extraction pressure and oil yield was observed. However, the highest oil yield was obtained under conventional extraction. Peroxydation in vivo et in vitro des acides gras polyinsaturés

It is well admitted that polyunsaturated fatty acids are the most sensitive fatty acids to oxidative damage because of their high number of double bonds. This concept could not be confirmed by in vitro, animal, or human studies since unexpected or even contradictory results were obtained. The explanation of that is probably related to the methods evaluating lipid peroxidation whose relevance is not always established, but especially to movements of polyunsaturated fatty acids within lipoproteins that results in their protection. This short review aims to discuss the main results related to this topic.

Cultivation and biochemical characterization of isolated Sicilian microalgal species in salt and temperature stress conditions

Abstract In the last years, the possibility to exploit autochthone microalgae in regional applications has been explored. The regional-based microalgal industry may bring several benefits, as autochthone microalgae are already adapted to the biotic and abiotic stresses of their environment. 8-HYDROXY-2'DEOXYGUANOSINE LEVELS AND ANTIOXIDANT STATUS IN RAT LIVER FED WITH OLIVE AND CORN OIL DIETS: EFFECT OF ASCORBIC ACID SUPPLEMENATION

DNA damage and antioxidants status were determined in liver of rat fed with olive and corn oil diets with and without ascorbic acid supplementation. In order to elucidate the role of fat intake, the study included a control and hyperlipidic diet. Liver antioxidant activities were significantly influenced by dietary fat and intake levels. In general, control groups fed with corn oil diets exhibited reduced liver antioxidant (SOD, catalase, and GSH-PX) and GSH levels compared with rats fed on olive oil diets. Background: The pathogenesis of severe COVID-19 is frequently associated with an uncontrolled inflammatory response. Severe forms of COVID-19 appear to be more frequent in obese patients, but an association with metabolic disorders is not established. Here, we focused on lipoprotein metabolism in patients hospitalized for severe pneumonia, depending on COVID-19 status. Pyrolysis of Tall Oil-Derived Fatty and Resin Acid Mixtures

Neutralised mixtures of tall oil-derived fatty acids and resin acids were separately pyrolysed (at 750∘C for 20 s) by pyrolysis gas chromatography with mass-selective and flame ionisation detection (Py-GC/MSD/FID) to clarify their thermochemical behaviour. The pyrolysate of fatty acid salts characteristically contained high amounts of unsaturated aliphatic hydrocarbons and minor amounts of monoaromatics, whereas the pyrolysis of resin acid salts mainly resulted in the formation of aromatics with up to three benzene rings and only in very low amounts of aliphatic hydrocarbons.
