Stability and bioaccessibility of EGCG within edible micro-hydrogels. Chitosan vs. gelatin, a comparative study

Micro-hydrogels are very promising systems for the protection and controlled delivery of sensitive bioactives, but limited knowledge exists regarding the impact of this encapsulation on their bioaccessibility. In this work, two different hydrogel-forming biopolymers (gelatin and chitosan) were compared as wall materials for the microencapsulation of a model flavonoid, (−)-epigallocatechin gallate (EGCG). In vitro digestion of betalainic foods. Stability and bioaccessibility of betaxanthins and betacyanins and antioxidative potential of food digesta.

Betalains are considered to be bioactive dietary phytochemicals. The stability of betacyanins and betaxanthins from either fresh foods or manufactured products of cactus pear fruit ( Opuntia ficus indica L. Mill. cv. Gialla and Rossa) and red beet ( Beta vulgaris L. ssp. vulgaris) was assessed in a simulated oral, gastric, and small intestinal digestion and compared with the digestive stability of purified pigments. Antioxidant effects of resveratrol in cardiovascular, cerebral and metabolic diseases.

Resveratrol-a natural polyphenolic compound-was first discovered in the 1940s. Although initially used for cancer therapy, it has shown beneficial effects against most cardiovascular and cerebrovascular diseases. The betalamic acid derivatives of betalain pigments (purple-red betacyanins and yellow betaxanthins) are dietary compounds occurring in a few plant foods including beets (Beta vulgaris) and cactus pears (Opuntia spp.). Belonging to betaxanthins, indicaxanthin is rich in yellow cactus pear (Opuntia ficus indica L., Mill). Betanin inhibits the myeloperoxidase/nitrite-induced oxidation of human low-density lipoproteins

Production of nitrogen dioxide by the activity of myeloperoxidase (MPO) in the presence of nitrite is now considered a key step in the pathophysiology of low-density lipoprotein (LDL) oxidation. This study shows that betanin, a phytochemical of the betalain class, inhibits the production of lipid hydroperoxides in human LDL submitted to a MPO/nitrite-induced oxidation. Kinetic measurements including time-course of particle oxidation and betanin consumption, either in the presence or in the absence of nitrite, suggest that the antioxidant effect is possibly the result of various actions. Job satisfaction is understood through its dual role on organization productivity and employees achievement (Smith, 1998). The use of instruments to measure it in Portugal, has been the subject of several studies, such as the adaptation of the Cuestionario de Satisfacción Laboral S20/23 (Meliá & Peiró, 1989) to Portuguese population carried out by Pocinho and García (2008). A future of journalism beyond the objectivity-dialogue divide? : Hybridity in the news of entrepreneurial journalists

As pioneers of new ideas and practices, many entrepreneurial journalists spearhead the change of journalism towards hybridity. By applying appraisal theory, this article examines a hybrid of objectivity and dialogue in daily news articles by five entrepreneurial journalism outlets – Axios, MustRead, National Observer, The Skimm and the Voice of San Diego. For comparative purposes, a dataset from three legacy media outlets was also analysed.
