Impacts sensoriels et non-sensoriels de la modification d’un attribut d’un produit alimentaire sur ses quantités consommées

Cette recherche examine l’effet de la modification d’un attribut aux effets indésirables (la teneur en alcool du vin) sur la consommation d’un produit. En adoptant une perspective sensorielle, nous testons si la baisse de la quantité de l’attribut du nouveau produit (vin à 9 % d’alcool au lieu de 13,5 %) a une influence physiologique sur les quantités consommées. De même, en adoptant une perspective cognitive, nous examinons si l’information sur la baisse de cet attribut influence également les quantités consommées. The objective is to identify the principles used by experts for pairing. Ten sommeliers and ten beer experts were presented with the description of a drink, either beer or wine. Evaluation of plasma antioxidant status after red wine intake

Several studies report that the plasma antioxidant capacity (PAC) increases after a single ingestion of red wine. However, data on the different behaviour of PAC after food intake in subjects of the same sex are still lacking. On the basis of these observations some investigations were undertaken in order to evaluate the effects of red wine intake on PAC in a homogeneous groups of healthy female volunteers (n=18). Additionally, the possible correlation between increase of PAC values and increase in uric acid levels was also assessed. This paper is based on results obtained during the project Vienergy (Interreg Italia-Malta programme 2007-2013) and contains data on the potential energy generation of biomass residues following pruning from vineyards located within the provinces of Trapani and Palermo.
