Wine proteins not only influence wine stability but are also being discussed as potential allergens. Proteins from red, rose, and white wines were enriched by dialysis and lyophilization followed by separation by SDS-PAGE. Significant differences were detected in the protein compositions of the analyzed wine varieties, and the major protein bands were identified by mass spectrometry after in-gel digestion with trypsin. In German Portugieser red wine, a total of 121 tryptic peptides were identified, which were attributed to 12 grape proteins and 6 proteins derived from yeast. The purpose of this work is to present that rearrangement of the industrial wastes purification system may cause the growth of the productivity. The analysis presented deals with the yeast factory Lesaffre in Wolczyn (Poland). Most of the industrial wastes (JW) produced there are utilized in agricultural fields (AF) but part of them is pre-treated in an evaporator battery (EB). Direct measurements of membrane fluidity by fluorescence anisotropy of protoplasts fromKloeckera apiculata andSaccharomyces cerevisiae, a low and a high ethanol tolerant strain respectively, are presented. The comparison of the behaviour of the two strains grown with or without ethanol enabled us to demonstrate the existing relationship between ethanol tolerance and membrane fluidity.

The fermentation of sugar beet juice as well as juice syrup medium by Zymomonas mobilis inoculum attached to stainless steel wire spheres was investigated. A semi-synthetic sucrose medium enriched with mineral salts and yeast extract was used as the control. It was established that raw sugar beet juice ensured good Zymomonas mobilis culture growth and slightly decreased ethanol synthesis applying both flame-burned and TiCl 4 -treated wire spheres as carriers (Q x = 0.05-0.06 g/l × h: Q eth = 1.02-1.22 g/l × h). Abstract The immobilization of yeast Saccharomyces cerevisiae, their growth and ethanol production were investigated using untreated and modified stainless steel wire spheres (WS) as carriers. The carrier surface was modified by oxidation, by treatment with titanium (IV) chloride (TiCl4) or by γ-aminopropyltrietoxysilane (AS) in an attempt to raise the efficiency of the immobilization of the yeast cells. The study of a few genes has permitted the identification of three elements that constitute a yeast polyadenylation signal: the efficiency element (EE), the positioning element and the actual site for cleavage and polyadenylation. In this paper we perform an analysis of oligonucleotide composition on the sequences located downstream of the stop codon of all yeast genes.
