Les trois âges du paternalisme. Cantines et alimentation ouvrière au Creusot (1860-1960)

2014

Valorization of rapeseed meal by solid state fermentation for an application in animal nutrition

2017

Solid state fermentation (SSF) is a biotechnological process particularly well adapted to the treatment of vegetable biomass. This technology adjustable to industrial scale, is adapted to current challenges in animal nutrition by developing fermented products in order to improve the quality of raw materials from a nutritional and functional point of view. The work presented in this thesis considers these issues using rapeseed meal from the oil crushing industry.A first screening study highlighted several fungal strains based on their growth performance and protein enrichment (total and digestible) of the substrate. Levels similar to those of soybean meal, the main protein source in animal n…

Les mots et les mets au restaurant. : Une analyse linguistique de l'expérience gastronomique.

2015

Infants' hedonic responsiveness to food odours: a longitudinal study during and after weaning (8, 12 and 22 months)

2013

Abstract Background Olfaction is a highly salient sensory modality in early human life. Neonates show keen olfactory sensitivity and hedonic responsiveness. However, little is known about hedonic olfactory responsiveness between the neonatal period and 2 years of age. In an attempt to fill this gap, this longitudinal follow-up study aimed at investigating hedonic responses to food odours in infants during the first 2 years of life. The second objective was to evaluate whether gender has an influence on hedonic responses during this early period. Four control stimuli and eight odours (four rated by adults as a priori pleasant and four a priori unpleasant) were presented in bottles to 235 inf…

The image of vegetables : speeches, representation and consumption habits in France

2018

Since the establishment of the PNNS (National Health Nutrition Program) in 2001 in France, everyone knows that we must eat vegetables daily, and from a very young age, to enjoy a balanced diet. In the country whose "gastronomic meal" was certified in 2010 by the UNESCO Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage of Humanity, the food culture has, for twenty years, seen its tradition based on on taste and commensality, disrupted by an increasingly functional approach to nutrition, focused on nutrition and health. The French eater is, in this context, beset by contradictory discourses on food, but which tend for the most part to make him responsible and…

Apelin treatment increases complete Fatty Acid oxidation, mitochondrial oxidative capacity, and biogenesis in muscle of insulin-resistant mice.

2012

Both acute and chronic apelin treatment have been shown to improve insulin sensitivity in mice. However, the effects of apelin on fatty acid oxidation (FAO) during obesity-related insulin resistance have not yet been addressed. Thus, the aim of the current study was to determine the impact of chronic treatment on lipid use, especially in skeletal muscles. High-fat diet (HFD)-induced obese and insulin-resistant mice treated by an apelin injection (0.1 μmol/kg/day i.p.) during 4 weeks had decreased fat mass, glycemia, and plasma levels of triglycerides and were protected from hyperinsulinemia compared with HFD PBS-treated mice. Indirect calorimetry experiments showed that apelin-treated mice…
