Physicochemical and nutritional characteristics of blueberry juice after high pressure processing

Abstract This study was carried out to investigate the impact of high pressure processing (HPP) at different pressure (200, 400 and 600 MPa) and treatment times (5, 9 and 15 min) on ascorbic acid, total phenolics, anthocyanin stability and total antioxidant capacity, were also studied at different physicochemical parameters such as pH, °Brix and color. HPP treatments resulted in more than 92% vitamin C retention at all treatment intensities. On the other hand, total phenolic content in the juice was increased, mainly after HPP at 200 MPa for all treatment times. The in vitro methods proposed for estimating calcium bioavailability can be useful in studying the effect of dietetic factors. The aim of our work was to study the possible influence of different infant formula components – calcium, phosphorus, lactose, citric acid, ascorbic acid and proteins – on calcium bioavailability, considering dialysability to be an estimate of bioavailability. In a previous paper it was shown that photoinhibition of reaction centre II of spinach thylakoids was predominantly caused by the degradation of D1-protein. An initial inactivation step at the QB-site was distinguished from its breakdown. The present paper deals with the question as to whether this loss of QB-function is caused by oxygen radical attack. For this purpose the photoinhibition of thylakoids was induced at 20°C in the presence of either superoxide dismutase and catalase or the antioxidants glutathione and ascorbic acid. Summary The oxygen metabolism is a good parameter for the determination of rapid responses of green moss callus to light. We measured the oxygen uptake with the Warburg method and polarographically with a Clark electrode and the YSI-oxygen monitor. The exposure of dark grown moss callus to red light (5–20 min) induced a rapid increase in O2-uptake after switching off the light. The respiration change depends on the exposure duration and the light intensity. Ascorbic Acid Stability in Ground Asparagus Samples and in Oxalic Acid Extracts

To establish the storage conditions for asparagus preparation before ascorbic acid determination, samples were ground, the mass was divided into three aliquots that were, respectively, stored at 4°C, – 18°C, or extracted with 1% oxalic acid. The extract was further split into aliquots and stored at 25°, 4°, –18° and -75°C. Ascorbic acid content was measured at different times of storage by a polarographic method. The rate of degradation increased with storage temperature; the degradation rate was higher in ground samples than in extracts; no significant changes in ascorbic acid content were observed in extracts stored for 7 days at -18° or for 90 days at -75°C.

Amorphous Ca2+ polyphosphate nanoparticles regulate the ATP level in bone-like SaOS-2 cells

ABSTRACT Polyphosphate (polyP) is a physiologically occurring polyanion that is synthesized especially in bone-forming osteoblast cells and blood platelets. We used amorphous polyP nanoparticles, complexed with Ca2+, that have a globular size of ∼100 nm. Because polyP comprises inorganic orthophosphate units that are linked together through high-energy phosphoanhydride bonds, we questioned whether the observed morphogenetic effect, elicited by polyP, is correlated with the energy-generating machinery within the cells. Kinetics of ascorbic acid degradation in fruit-based infant foods during storage

The kinetics of ascorbic acid (AA) degradation in a fruit-based beikost product added with AA were determined after storage at 4, 25, 37 and 50 °C during 4, 8, 12, 16 and 32 weeks in plastic polypropylene/ethylenevinyl alcohol vacuum packaging. It was confirmed that AA degradation followed an Arrhenius first-order kinetics, with an activation energy of 20.11 ± 0.33 kcal mol−1. No AA losses at 4 °C were recorded during the entire storage period. In contrast, a time - and temperature - dependent decrease (p the degradation rate decreasing from 50 °C to 25 °C, as expected. AA percentage retention at the end of storage ranged between 6.4% (50 °C/16 weeks) and 100.9% (4 °C/32 weeks).

Variations in levels of antioxidant compounds (ascorbic acid, total phenolics, and total carotenoids), total antioxidant capacity, and color changes in a vegetable (tomato, green pepper, green celery, onion, carrot, lemon, and olive oil) beverage treated by high hydrostatic pressure (HHP) were evaluated in this work.
