La frutta di IV gamma è un prodotto altamente deperibile, con una shelf-life molto corta (5-7 giorni) influenzata dalle numerose variabili che entrano in gioco accelerando la senescenza del prodotto. Il suo alto valore aggiunto può giustificare l’utilizzo di soluzioni di conservazione più o meno costose. I metodi attualmente esistenti sono numerosi, spaziano dal dipping in sostanze naturali o sintetiche, all’utilizzo di packaging attivi, all’impiego di atmosfere modificate, ecc. This work proposes for the first time a model for reusing almond (Prunus dulcis cv. Casteltermini from Sicily, Southern Italy) skin to formulate a new functional blackberry (Rubus ulmifolius Schott) jam. For this purpose, blackberries were analysed fresh and as jam, traditionally prepared with a minimum fruit amount of 80%. Different percentages of almond skin (20, 15, and 10% w/w) were added to jam. The phytochemical profile of enriched jam was investigated by LC-ESI/LTQOrbitrap/MS analyses. Phytochemical, ecological and antioxidant evaluation of wild Sicilian thyme: Thymbra capitata (L.) Cav.

In a broad survey conducted throughout the Sicily region, 45 different sites were identified where thyme grows wild. All the biotypes collected were classified as Thymbra capitata (L.) Cav. (syn. Thymus capitatus (L.) Hoffmanns. & Link). Cluster analysis based on the main morphological characteristics of the plant led to the division of the biotypes into 3 major groups. All samples were analyzed for their secondary phytochemical metabolites identified in the extracts and the essential oils. LC-UV-DAD/ESI-MS and GC-FID/GC-MS have been applied to characterize the extracts and the essential oils, respectively. Abstract This research aimed at extending the choice of natural antimicrobials/antioxidants for food applications. Four plant extracts, Posidonia oceanica (PO), Green Tea (GT), Grape seeds (GS) and Grape skin (GK), were analyzed to determine their total phenolic content, antioxidant activity and in vitro antimicrobial performance. PO extract showed the highest total phenolic content (711 mg gallic acid/g extract) and antifungal activity against Aspergillus niger and Penicillium chrysogenum . Das Buch befasst sich mit dem Zusammenspiel von kognitiven, emotionalen und motivationalen Faktoren beim Aufbau von mündlicher Kompetenz in Deutsch als Tertiärsprache bei erwachsenen Italienern.
