Low vicine and convicine content in faba bean seeds is under oligogenic control and can be easily monitored by breeding. Aim of the study was to show that new faba beans (FB) genotypes with low content of vicine and convicine (low V/C FB) produced by selection, are non-toxic and non-hemolytic even when ingested in large amounts by highly susceptible glucose-6-phosphate dehydrogenase (G6PD)-deficient individuals. Evidence indicates that V/C, amino-pyrimidine derivatives present in high amounts in normal FB, are the causative agents of favism, ie severe oxidative damage and hemolysis occurring in G6PD-deficient subjects after FB ingestion. A contribution to the study of staling of white bread: effect of water and hydrocolloid

Abstract Staling of white bread at ambient temperature was studied using differential scanning calorimetry and dynamic mechanical thermal analysis. During storage, sample hydration varied slightly, from 0 to 0.4% per day, depending on packaging conditions. An increase in rigidity was observed, which was attributed both to starch retrogradation and to changes in the organization of the amorphous part of crumb. The glass transition temperature of crumb was not significantly modified by these structural changes. Hydrocolloids did not affect the overall shape of the viscoelastic behavior of crumb in the temperature range from −40°C to 80°C, and had a limited influence on the kinetics of starch …

Inside the project “Piano per la Produzione di Proteine Vegetali in Sicilia” investigations were carried out to characterize a bean population cultivated in the Parco delle Madonie area, the ‘Fagiolo Badda di Polizzi’. The producers’ interest for this landrace and the appreciation of the consumers could justify the start up of a valorization program through a product certification. Researches on the morpho-physiological aspects and on the nutritional profile were made in trials conducted between 2005 and 2007. Abstract Effects of soybean meal (SBM) based diet on growth performance, histology of the intestinal epithelium and on the gut microbiota of juvenile rainbow trout (Oncorhynchus mykiss) were investigated on two trials lasting for 8 weeks (Trial I) and 18 weeks (Trial II). The microbiological characterization was done both with conventional plating techniques, biochemical profiling and length heterogeneity analysis of PCR amplified 16S rDNA (LH-PCR). The hydrolysis of the soybean Bowman-Birk inhibitor in the presence of catalytic amounts of bovine trypsin and the formation of the non-covalent enzyme-inhibitor complex with an equimolar amount of enzyme are monitored by means of high-performance capillary electrophoresis (HPCE). The inhibitor is cleaved in the trypsin-reactive and more slowly in the chymotrypsin-reactive subdomain. HPCE proves itself as the only reliable analytical tool to monitor these reactions in clear contrast to classical electrophoretic, chromatographic and enzymatic methods.
