Effect of the pasture, in different seasons, and of the ripening time on the Caciocavallo Palermitano cheese

2008

The Caciocavallo Palermitano cheese is made processing Cinisara cow milk, which shows very interesting qualitative characteristics (Bonanno et al., 2004). The aim of this research was to study the effect of the pasture, in different seasons, and of different ripening on the yield in cheese after 24 h and on the chemical composition of the Caciocavallo Palermitano cheese

Effect of the pasture on milk production from Cinisara cows over the seasons

2008

Cinisara is a Sicilian autochthonous breed of dairy cow and its milk is processed to make Caciocavallo cheese. The pasture is the basis of the diet during all the year, but its production is not continuous and homogenous, because of environmental constrains (Alabiso et al., 2005). The feeding integrations are concentrate, hay and or straw, and their quantities given to the animals are different during the year in relation to the pasture resources. The aim of this research was to study the effect of the pasture on milk production from Cinisara cows over the seasons

Response of captive seabass and seabream as behavioural indicator in aquaculture

2010

Welfare of cultivate fish at high-density represents an important concern for modern aquaculture. The behaviour of European seabass (Dicentrarchus labrax) and seabream (Sparus aurata) reared in cages was studied in a fish farm of northern Sardinia (Italy) in autumn 2006 to test whether captive condition had an effect on the movement patterns of these two species.Video images recorded before, during and after the manual feeding distribution allowed us to collect data on different behaviours of captive fish. Thus, behaviours indicating the position of fish in the water column, swimming direction and possible aggressive behaviours (aggression, direction change and collision) showed juveniles a…

Polyculture as a tool to increase the economic income: a study case in the Gulf of Castellammare

2010

Polyculture is a practice involving integration between organisms of different trophic levels (i.e. fish with low-trophic-level organism like molluscs and/or algae). This paper, reporting on a field experiment carried out during 2004 in the Gulf of Castellammare (South Tyrrhenian), showed that mussels transplanted in areas under fish farm influence grew up better than mussels transplanted far from fish farm. Thus, results pointed out polyculture as a reliable tool for i) increasing local bivalve production, ii) obtaining the reduction of importation from other countries and iii) increasing the environmental sustainability of fish aquaculture.

Genetic parameters for somatic cell score according to udder infection status in Valle del Belice dairy sheep and impact of imperfect diagnosis of in…

2010

Abstract Background Somatic cell score (SCS) has been promoted as a selection criterion to improve mastitis resistance. However, SCS from healthy and infected animals may be considered as separate traits. Moreover, imperfect sensitivity and specificity could influence animals' classification and impact on estimated variance components. This study was aimed at: (1) estimating the heritability of bacteria negative SCS, bacteria positive SCS, and infection status, (2) estimating phenotypic and genetic correlations between bacteria negative and bacteria positive SCS, and the genetic correlation between bacteria negative SCS and infection status, and (3) evaluating the impact of imperfect diagno…

Rapid and Nondestructive Determination of Egg Freshness Category and Marked Date of Lay using Spectral Fingerprint

2020

The potential of nondestructive prediction of egg freshness based on near-infrared (NIR) spectra fingerprints would be beneficial to quality control officers and consumers alike. In this study, handheld NIR spectrometer in the range of 740 nm to 1070 nm and chemometrics were used to simultaneously determine egg freshness based on marked date of lay for eggs stored under cold and ambient conditions. The spectra acquired from the eggs were preprocessed using multiplicative scatter correction and principal component analysis (MSC-PCA). Linear discriminant analysis (LDA) was used to build identification model to predict the category of freshness, while partial least square regression (PLS-R) wa…

Guarana seed extracts as a useful strategy to extend the shelf life of pork patties: UHPLC-ESI/QTOF phenolic profile and impact on microbial inactiva…

2018

Abstract The antioxidant and antimicrobial effects of guarana seed extracts (GSE) added to pork patties were evaluated for 18 days storage at 2 ± 1 °C. Five treatments were prepared: i) without natural antioxidant [control (negative control)], ii) with BHT at 200 mg/kg (positive control), and iii) with three different concentrations: 250  mg/kg (guarana seed low dose-GSL), 500  mg/kg (guarana seed medium dose-GSM) and 1000  mg/kg (guarana seed high dose-GSH) of guarana extracts, respectively. The pH, instrumental colour (CIE L*, a*, b*), total viable counts (TVC), Pseudomonas spp. counts and lactic acid bacteria (LAB) counts, 2-thiobarbituric acid reactive substances (TBARS) and carbonyl co…

Exopolysaccharide produced by Weissella confusa: Chemical characterisation, rheology and bioactivity

2019

Abstract The purpose of this study was to characterise the production of exopolysaccharide (EPS) by indigenous lactic acid bacteria (LAB) isolated from traditional Algerian dairy products and to evaluate their possible use in agri-foods. Among the collection of isolated strains, the strain Weissella confusa (W4) was selected for its ability to produce EPS once exposed to a sucrose culture medium. EPS produced were first isolated with a standardised method and further characterised in terms of molecular size, antioxidant activity, and rheological properties. Its direct implication in the texture and syneresis of acid milk gel was evaluated offering interesting industrial applications for its…

Stakeholders' involvement in establishing sustainable business models

2020

PurposeCooperatives play a dominant role in the European dairy sector. The aim of the study is to define a sustainable business model of dairy cooperatives and explore how stakeholders can contribute to innovation processes generated in this ecosystem.Design/methodology/approachStarting from theoretical assumption and investigation of three major cooperatives located in an ecological agricultural Poland region, known also as “Green Lungs of Poland,” the authors propose a sustainable business model where the role stakeholders in the value co-creation is emphasized.FindingsThe findings of this paper show how the involvement of various stakeholders by the cooperatives contributes to the develo…
