PolyGC was titrated with a strong base in the presence of increasing concentrations of NaCl (from 0.00 to 0.60M) either in water solution or with the polynucleotide solubilized in the aqueous core of reverse micelles, i.e., the cationic quaternary water-in-oil microemulsion CTAB/n-hexane/n-pentanol/water. The results for matched samples in the two media were compared. CD and UV spectroscopies and, for the solution experiments, pH measurements were used to follow the course of deprotonation. International audience; Oxidation of omega-3 fatty acids is a major limitation on its enrichment in food and beverages. An efficient and simple method to monitor lipid oxidation in complex systems is essential to limit lipid oxidation during formulation and processing. Fish oil-in-water emulsions (20% v/v) were exposed to iron or free radical initiated oxidation. Conjugated dienes (CDs) were rapidly measured using a previously developed fat extraction method. Microemulsions: Phase transitions and their dynamics

By differential scanning microcalorimetry we investigate temperature-induced phase transitions and their dynamics in mixtures of water, oil and a non-ionic surfactant. Special emphasis is on an investigation of the transition from a lamellar to a microemulsion phase and on the emulsification failure. The first-order phase transition from a lamellar to a microemulsion phase leads to heat changes up to 1k BT per surfactant molecule. These large values for the latent heat are quantitatively described by an interfacial model which takes into account the temperature dependence of the spontaneous curvature.

International audience; The aim of this study was to evaluate the effects of candelilla (CAN) or carnauba wax (CAR) incorporation on functional properties of edible sodium caseinate (CAS) films. Glycerol and Tween-80 were used as the plasticizer and the emulsifier, respectively. The results showed that the incorporation of waxes increased film opacity, total color differences (∆E), and mechanical resistance and reduced film lightness, water vapor permeability (WVP), and elongation at break. Bei intravenoser Applikation von radioaktiv markierten Fettemulsionen an Ratten ergab sich, das die Verwertung des Fettes im Stoffwechsel durch die Grose der Fetteilchen beeinflust wird. Kleinere Teilchen (Durchmesser etwa 0,5 bis 1 µ) werden schneller verwertet als grosere (Durchmesser uber 3 bis 5 µ). Letztere werden zum Teil mechanisch in der Lunge festgehalten. Die Verfettung der Leber war je nach Teilchengrose verschieden. Histologische Untersuchungen mit nicht markierten Emulsionen konnten diese Befunde weitgehend bestatigen.

During the mineralisation of metal carbonates MCO3 (M = Ca, Sr, Ba, Mn, Cd, Pb) liquid-like amorphous intermediates emerge. These intermediates that form via a liquid/liquid phase separation behave like a classical emulsion and are stabilized electrostatically. The occurrence of these intermediates is attributed to the formation of highly hydrated networks whose stability is mainly based on weak interactions and the variability of the metal-containing pre-critical clusters. Their existence and compositional freedom are evidenced by electrospray ionization mass spectrometry (ESI-MS). Liquid intermediates in non-classical crystallisation pathways seem to be more common than assumed.
