Growth characteristics of Aspergillus chevalieri and other fungi from under-coating of chocolate truffles

Growth characteristics of fungi, which occasionally affected chocolate truffles, have been studied, using moulded and non-moulded samples. A whitish mycelial growth, located at the filling-coating interface is identified as Eurotium/Aspergillus chevalieri. The spores of other xerophilic molds (Aspergillus fumigatus, A. penicilloides and Penicillium verrucosum) were also found at the filling-coating interface. The water activity of chocolate coating was low enough to prevent fungal growth on the external surface of the truffles. Abstract. In deep convective clouds, heavy rain is often formed involving the ice phase. Simulations were performed using the 3-D cloud resolving model COSMO-SPECS with detailed spectral microphysics including parameterizations of homogeneous and three heterogeneous freezing modes. The initial conditions were selected to result in a deep convective cloud reaching 14 km of altitude with strong updrafts up to 40 m s−1. Abstract Wind tunnel experiments were carried out to investigate the influence of turbulence on the collection kernel of graupel. The collection kernel defines the growth rate of a graupel accreting supercooled droplets as it falls through a cloud. Upper tropospheric observations outside and inside of cirrus clouds indicate water vapour mixing ratios sometimes exceeding water saturation. Relative humidities over ice (RHice) of up to and more than 200% have been reported from aircraft and balloon measurements in recent years. From these observations a lively discussion continues on whether there is a lack of understanding of ice cloud microphysics or whether the water measurements are tainted with large uncertainties or flaws.
