Abstract Gluten films obtained in acid conditions display some protein dispersion difficulties. Ultrasound treatment (UT) could represent an interesting strategy for improving gluten film appearance. Different UT exposure times were applied to film-forming dispersion. The aim of this work was to investigate the effect of ultrasound treatment on gluten-based films at molecular and mesoscopic levels. Distribution in gliadin and glutenins was determined with SE-HPLC. The UT improved protein dispersion and final film appearance. The influence of diet on the composition of the intestinal microbiota and related pathologies has been known for some time. Some classes of nutrients, such as fatty acids belonging to the omega 3 series, have particular effects on the bacteria that make up the intestinal microbiota. ω-3 PUFAs affect the gut microbiota in three different ways: by modulating the type and abundance of intestinal bacteria, by regulate SCFAs levels, and by alter the levels of proinflammatory mediators. This article describes the main results of an ethnographic study on citizen participation carried out in the context of the development of the Urban Initiative (2007-2015): Cuenca-Barrio de San Antón. In classroom settings, laughter and smiles are resources for action that are available to both teachers and students. Este trabajo analiza las relaciones entre la formación, la investigación en didáctica y la práctica docente del profesorado de ciencias de secundaria. La muestra no probabilística está formada por 55 profesores de secundaria. La metodología elegida es de tipo mixto (cuantitativo-cualitativo) y utiliza tres instrumentos complementarios: un cuestionario, un protocolo de observación en el aula y una entrevista. Los resultados de los cuestionarios muestran dos tipos de formación en didáctica de las ciencias: activa y estándar.
