A 21st century technique for food control: electronic noses.

This work examines the main features of modern electronic noses (e-noses) and their most important applications in food control in this new century. The three components of an electronic nose (sample handling system, detection system, and data processing system) are described. Special attention is devoted to the promising mass spectrometry based e-noses, due to their advantages over the more classical gas sensors. String dynamics and metastability of fully-heavy tetraquarks

Multiquark states have been advocated to explain recent experimental data in the heavy-light sector, and there are already speculations about multiquarks containing only heavy quarks and antiquarks. With a rigorous treatment of the four-body problem in current quark models, full-charm $(cc\bar c\bar c)$ and full-beauty $(bb\bar b\bar b)$ tetraquarks are found to be unbound. Thus their stability should rely on more subtle effects that are not included in the simple picture of constituent quarks. The case of $(bc\bar b\bar c)$ might be more favorable if the naive color-additive model of confinement is replaced by a string-inspired interaction.

Use of selected autochthonous lactic acid bacteria for Spanish-style table olive fermentation

The present work presents a successful attempt to achieve an enhanced and more predictable fermentation process in Spanish-style green olive technology by selection and use of autochthonous starter cultures. During the first phase of this work, two Spanish-like fermentations of green table olives of cultivar (cv) “Nocellara del Belice”, coming from irrigated and not irrigated fields, were monitored, in order to highlight the best agricultural conditions for drupe production and to isolate lactic acid bacteria strains with relevant technological properties. Infrared based saliva screening test for COVID‐19

Severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) has resulted in an unprecedented need for diagnostic testing that is critical in controlling the spread of COVID-19. We propose a portable infrared spectrometer with purpose-built transflection accessory for rapid point-of-care detection of COVID-19 markers in saliva. Initially, purified virion particles were characterized with Raman spectroscopy, synchrotron infrared (IR) and AFM-IR. International audience; The objective of this study was to develop a probabilistic model in order to determine the contamination level of Salmonella and Listeria monocytogenes in ready-to-cook poultry meat, after a high pressure (HP) treatment. Microbial contamination of milk and dairy products from restaurants in Spain

This study was carried out to evaluate the microbiological quality of milk and some dairy products, including 95 lots of warm milk, 95 lots of milk conserved at room temperature, and 75 lots of dairy products collected from restaurants in Spain. According to the European microbiological criteria (92/46/EEC, 93/43/EEC, and Commission Regulation No. 2073/2005), 31% and 35% of the total examined lots exceed the adopted limits of mesophilic aerobic counts and Enterobacteriaceae, respectively.
