Microbial Dynamics between Yeasts and Acetic Acid Bacteria in Kombucha: Impacts on the Chemical Composition of the Beverage.

Kombucha is a traditional low-alcoholic beverage made from sugared tea and transformed by a complex microbial consortium including yeasts and acetic acid bacteria (AAB). To study the microbial interactions and their impact on the chemical composition of the beverage, an experimental design with nine couples associating one yeast strain and one AAB strain isolated from original black tea kombucha was set up. Three yeast strains belonging to the genera Brettanomyces, Hanseniaspora, and Saccharomyces and three strains of Acetobacter and Komagataeibacter species were chosen. The antimicrobial actitity of water extracts from Labiatae.

In vitro antimicrobial activity of water extracts of oregano, rosemary and sage were tested against five different fungi (Phytophthora cactorum, Verticillium dahliae, Fusarium oxysporum f.sp. lycopersici, Phoma tracheiphila and Botrytis cinerea). Infusion, decoction and maceration methods were used to obtain the extracts. Their inhibent effect on radial fungal growth was determined at three different concentrations (500 mL/L, 50 mL/L and 5 mL/L). After 4, 8 and 12 days the radial growth of the species was measured and fungitoxicity was recorded in terms of percent colony inhibition. The survival of commensal bacteria in the human gut partially depends on their ability to metabolize host-derived molecules. The use of the glycosidic moiety of N-glycoproteins by bacteria has been reported, but the role of N-glycopeptides or glycoamino acids as the substrates for bacterial growth has not been evaluated. Production of functional probiotic, prebiotic, and synbiotic ice creams

In this work, 3 types of ice cream were produced: a probiotic ice cream produced by adding potentially probiotic microorganisms such as Lactobacillus casei and Lactobacillus rhamnosus; a prebiotic ice cream produced by adding inulin, a prebiotic substrate; and a synbiotic ice cream produced by adding probiotic microorganisms and inulin in combination. In addition to microbial counts, pH, acidity, and physical and functional properties of the ice creams were evaluated. Multiresistant waterborne pathogens isolated from water reservoirs and cooling systems

Aims:  To determine the incidence of multiple antibiotic-resistant strains of the emergent human pathogens Legionella pneumophila, Pseudomonas aeruginosa and mesophilic Aeromonas species among those isolated from water reservoirs and industrial cooling systems. Methods and Results:  Water from four natural water reservoirs and four industrial cooling towers was sampled for 1 year period.
