Influence of label and location of testing on acceptability of cream cheese varying in fat content

The acceptability of low-, medium- and high-fat versions of a cream cheese to consumers was measured in different conditions by rating overall distance from ideal. The influence of label (unlabelled vs. commercial package) differed according to the cream cheese fat-level habits of the assessors and to the fat level of the product. In labelled testing, high-fat cream cheese was more highly accepted by high- and medium-fat users and low-fat cream cheese seemed to be further from ideal for high-fat users. The location of testing (home vs. laboratory) affected the rating of only the high-fat product: consumers are more severe on it at home than in the laboratory.

Cet article se propose d’envisager le rapport entre deprise et recit de soi comme source de continuite identitaire dans une perspective philosophique, en reference a la notion d’identite narrative de Paul Ricœur. Si le recit de soi permet de mettre en forme le temps que l’on vit sans supposer un noyau non changeant de l’identite, ce recit devrait favoriser le processus de deprise. The Norwegian Food and Health (FH) school subject aims to develop students' ability to understand the association between diet and health. Research on FH in Norway indicates that the main focus today is on cooking and the development of practical cooking skills, leaving little emphasis on activities related to the more theoretical aspects of the curriculum. A matching task as a potential technique for descriptive profile validation

If panellists can successfully match products to the corresponding descriptive profiles, then the profiles can be regarded as product-relevant and valid. This work examined the ability of a trained panel to perform a matching task between products and their descriptive profiles. A 13-member panel, trained to assess eight cheeses in terms of 19 flavour attributes, performed the task based on their individually developed profiles. AbstractLike the lobsters, some terrestrial crabs and other crayfishes, the Australian red claw crayfish, Cherax quadricarinatus, elaborates in its stomach wall calcium storage structures called gastroliths. For understanding the cyclic elaboration and stabilization of these amorphous calcified structures, we studied the organic matrix (OM) of these paired biomineralizations. Multisite field potential recordings and analysis of the impulse propagation pattern in cardiac cells culture

To provide further insights into the impulse propagation between cardiac myocytes, we performed multiparametric studies of excitation spread with cellular resolution in confluent monolayers of cultured cardiomyocytes (CM). Simultaneous paired intracellular recordings of action potentials in two individual CM revealed slight periodic spontaneous advances/delays in the interspike time lag. Influence of sugar and fat contents on preference for cream cheese: A preliminary study

Abstract In order to assess the importance of fat and sugar in acceptability of semi-solid French cream cheese, 30 subjects gave a hedonic judgement, after consumption, for three formulations (150 g) varying in fat content which they were required to sweeten and for nine small previously sweetened samples (30 g). Subjects participated in five laboratory meals, cream cheese being the third part of a meal. After this period, the subjects filled out a questionnaire measuring attitudes, beliefs and intention of behaviour with regard to consumption of cream cheese. Balancing of mitochondrial translation through METTL8-mediated m3C modification of mitochondrial tRNAs.

Mitochondria contain a specific translation machinery for the synthesis of mitochondria-encoded respiratory chain components. Mitochondrial tRNAs (mt-tRNAs) are also generated from the mitochondrial DNA and, similar to their cytoplasmic counterparts, are post-transcriptionally modified. Here, we find that the RNA methyltransferase METTL8 is a mitochondrial protein that facilitates 3-methyl-cytidine (m3C) methylation at position C32 of the mt-tRNASer(UCN) and mt-tRNAThr. METTL8 knockout cells show a reduction in respiratory chain activity, whereas overexpression increases activity. Biomineralization toolkit: the importance of sample cleaning prior to the characterization of biomineral proteomes.

In an interesting work published recently in PNAS, Drake et al. (1) presented a proteomic study of the skeleton from the stony coral Stylophora pistillata . This study identified proteins that are associated to the mineral phase (i.e., that potentially contribute to shape the skeleton). Analysis of metabolic pathways by the growth of cells in the presence of organic solvents

A new approach to the analysis of metabolic pathways involving poorly water-soluble intermediates is proposed. It relies upon the ability of the hydrophobic intermediates formed by a sequence of intracellular reactions to cross the membrane(s) and partition between aqueous and organic phases, when cells are incubated in the presence of a nonpolar and nontoxic organic solvent.
