Controlled temperature grinding under modified atmosphere for Almond (Prunus Dulcis) paste production

The quality of the raw material and the processing conditions have a great influence on the nutritional properties of finished products. This research is focused on almond paste production and aims at developing a new production process to deliver the high nutritional content of the raw almonds into the finished product. Raw almonds are composed mainly of fats (approx. 50%) and proteins (approx. 25%), and are particularly rich in omega 6 fatty acids, and are hence exposed to denaturation and oxidation phenomena during the traditional grinding/homogenization process. Hydrogen bonding patterns of 7,9-dimethylguanine and its transplatinum(II) complexes

Methylation at the N7 position is one of the most frequently naturally occurring modifications of guanosine. This alteration drastically changes the hydrogen bonding and acid–base properties of the guanine nucleobase. Here we show on the example of the model nucleobase 7,9-dimethylguanine that due to blockage of N7 of the purine ring, new hydrogen bonding patterns occur on the minor groove binding face of this nucleobase involving the ring nitrogen N3 and the exocyclic amino group N2H2. Plant viruses move through plasmodesmata to infect new cells. The plant endoplasmic reticulum (ER) is interconnected among cells via the ER desmotubule in the plasmodesma across the cell wall, forming a continuous ER network throughout the entire plant. This ER continuity is unique to plants and has been postulated to serve as a platform for the intercellular trafficking of macromolecules. Pseudouridine: Still mysterious, but never a fake (uridine)!

International audience; Pseudouridine () is the most abundant of >150 nucleoside modifications in RNA. Although was discovered as the first modified nucleoside more than half a century ago, neither the enzymatic mechanism of its formation, nor the function of this modification are fully elucidated. We present the consistent picture of synthases, their substrates and their substrate positions in model organisms of all domains of life as it has emerged to date and point out the challenges that remain concerning higher eukaryotes and the elucidation of the enzymatic mechanism.

Performance of revised STO(1M)-3G basis set for prediction of 5-fluorocytosine chemical shifts.

Nuclear shieldings and chemical shifts of 5-fluorocytosine (5FC) were predicted in the gas phase and DMSO solution modeled by polarizable continuum model using B3LYP density functional and revised STO(1M)-3G basis set. For comparison, eight arbitrary selected basis sets including STO-3G and medium-size Pople-type and larger dedicated Jensen-type ones were applied. The former basis sets were significantly smaller, but the calculated structural parameters, harmonic vibrational frequencies, were very accurate and close to those obtained with larger, polarization-consistent ones.
