The prevalence of several diseases increases by age, including cardiovascular diseases, which are the leading cause of morbidity and mortality worldwide. Aging, as a complex process characterized by senescence, triggers various pathways, such as oxidative stress, systemic inflammation, metabolism dysfunction, telomere shortening, mitochondrial dysfunction and deregulated autophagy. A better understanding of the mechanisms underlying senescence may lead to the development of new therapeutic targets and strategies for age-related pathologies and extend the healthy lifespan. The use of MAP for maintaining quality of ‘Bifara’ fig fruits

Bifara is an old cultivar of Sicilians breba fig (Ficus carica L.). Several studies on market trends and consumer preferences show that fresh fruit is required to have a good visual appearance and to be without defects on the skin in order to be considered fresh and healthy. Breba fig is a climacteric fruit that ripens very rapidly, and therefore, once harvested, it must be kept under low temperature. Abstract Aims The purpose of this study was to functionalize an ovine stretched cheese belonging to 'Vastedda' typology with red grape pomace powder (GPP) of Nero d’Avola cultivar and to characterize the microbiological, physicochemical, phenolic profile and sensory characteristics of the final cheeses. Methods and Results Before cheeses production, GPP was characterized for its microbiological profile, antibacterial activity and polyphenolic content.
