The liver activity of lipogenic enzymes, the lipid content in various tissues, and plasma lipid levels of major, were measured in sea bass (D. labrax) fed over 96 days either a, fish meal-based control diet or preparations where 70% of fish meal protein was replaced by wheat gluten singly or in combination with pea or soybean meals. Relative to the controls, sea bass fed the wheat gluten-based diet resulted in stimulated lipogenesis in liver and increased lipid deposition in muscle. The opposite occurred when a substantial amount of soybean meal was included in the diet. In Sicily, the current increasing cultivation of Opuntia ficus-indica (L.) Mill. corresponds to a availability of prickly pears pulp (PPP) that residues from fruits processing for juice extraction, comprised of peel, pulp and seeds. This investigation aim to evaluate the nutritional traits of PPP for ruminants feeding, and the effect of potassium metabisulfite (PMB) as a natural stabilizer to limit initial rapid PPP fermentation. The last excavation (2004-2006) in the eastern necropolis of Polizzello (CL) allowed to complete the excavation of this important funerary area and to discover a grave (No 2/2004) containing over 100 dead children. It represents a privileged observatory for the study of childhood in the indigenous world of Sicily. The structure of the tomb, the relative and absolute chronology, the composition of the kit with its symbolic value and the mode of deposition of the buried are analyzed, thanks to the data of the stratigraphic excavation. The aim of this study was to evaluate the use of Formagraph to determine the milk clotting activity of animal Sicilian rennet pastes. Clotting time (r), curd firming time (k20) and curd firmness (a30) were measured during coagulation tests carried out with pasteurized cows’ milk. The rennet paste samples were collected in 11 dairy factories located throughout western Sicily. The increasing request for classic foods has led to a higher demand for cheeses enjoying a “recognition of quality” status. This phenomenon has also affected Sicilian dairy products, in particular protected designation of origin (PDO) “Vastedda della valle del Belìce” (VdB), a cheese traditionally available only during the summer season, but requested year round.
