Halogen and Hydrogen Bonded Complexes of 5-Iodouracil

2013

Three derivatives of 5-iodouracil were prepared, and their complexation properties, supplemented by 5-iodouracil under the same conditions, were studied with and without halogen bond acceptors in N,N-dimethylformamide, N,N-diethylformamide, N-methylformamide, formamide, dimethylsulfoxide, and water. The intermolecular halogen and hydrogen bonding interactions observed in the solid state were investigated using single crystal X-ray diffraction and quantum chemical calculations, and the acquired data were contrasted with bonding interactions previously reported for 5-iodouracil in the Cambridge Structural Database. It was found that the polarized iodine atom and the amidic NH functionality ac…

Olfactory foraging in temperate waters: sensitivity to dimethylsulphide of shearwaters in the Atlantic Ocean and Mediterranean Sea

2014

AbstractMany procellariiforms use olfactory cues to locate food patches over the seemingly featureless ocean surface. In particular, some of them are able to detect and are attracted by dimethylsulfide (DMS), a volatile compound naturally occurring over worldwide oceans in correspondence with productive feeding areas. However, current knowledge is restricted to sub-Antarctic species, and to only one study realized under natural conditions at sea. Here, for the first time, we investigated the response to DMS in parallel in two different environments in temperate waters, the Atlantic Ocean and the Mediterranean Sea, employing Cory's (Calonectris borealis) and Scopoli's shearwaters (Calonectri…

The caramel flavour: impacts of the volatile and the non-volatile fraction on perception

2013

The aim of this thesis was to investigate the impact of the volatile odorant fraction and the non-volatile fraction on the perception of caramel flavour. The first step focused on the analytical characterization of the volatile odorant fraction of caramel using Gas Chromatography coupled to Olfactometry (GC/O), GC/Mass Spectrometry (GC/MS) and heart-cutting MDGC/MS/O. Results highlighted the presence of more than one hundred compounds and demonstrated the complexity of the caramel volatile fraction. The objective of the second step was to understand the contribution of odorant compounds identified to the caramel aroma typicality. Literature shows that odour intensity is not sufficient to ev…

Characterisation of odour active compounds along extraction process from pea flour to pea protein extract

2013

International audience; Pisum sativum, rich in proteins, represents a main interest for human food. Nevertheless, pea products are underused because of their organoleptic characteristics. The extraction process of the proteins can partly explain the development of the typical flavour. The objective of the present study was to identify odour active compounds and to follow their evolution during four steps of the process (from pea flour to pea protein).Firstly, volatile compounds were extracted by Solvent Assisted Flavour Evaporation from each step and analysed by Gas Chromatography coupled with Mass Spectrometry and Olfactometry. Secondly, the volatile compounds, identified as odour active in…

Effet d'une éducation sensorielle sur les préférences et les comportements alimentaires d'enfants en classe de cours moyen (CM).

2008

Sensory experience of a meal (or mere exposure) can interact with preferences and food behaviour. On the other hand, current campaigns of nutritional information try to modify food behaviours by making people aware of the dangers of over eating and providing guidelines for healthy eating behaviour. Nevertheless, this approach doesn't take into account the pleasure to eat. The project "EduSens" bases itself on a hedonist and sensory approach in taste education that unites exposure to food and information about food. The aim of the study was to first develop tools to evaluate the effects of this sensory education and then to use them to measure the effects of a sensory education in a school c…

Human sweat odour conjugates in human milk, colostrum and amniotic fluid

2012

International audience; Using ultra performance liquid chromatography-mass spectrometry we identified for the first time glutamine-N-alpha-conjugates of the fatty acids (E)/(Z)-3-methylhex-2-enoic acid and (R)/(S)-3-hydroxy-3-methylhexanoic acid as well as cysteinylglycine-S-conjugates of (R)/(S)-3-methyl-3-sulphanylhexan-1-ol and (R)/(S)-3-sulphanylhexan-1-ol as constituents of human milk and colostrum. The glutamine-N-alpha-conjugates were detected also in human amniotic fluids. The mean values of glutamine-N-alpha-conjugate of (R)/(S)-3-hydroxy-3-methylhexanoic acid were highest in colostrums with a range of <0.1-382 mu g/kg, followed by the mature human milk with values from <0.1 to 39.…

Liking the odour, liking the food. Toddlers' liking of strongly flavoured foods correlates with liking of their odour

2014

Olfaction plays a significant role in the sensing of foods. However, little information is available at any age on the relationship between the hedonic responses to given food odours and the effective liking and disliking of foods bearing these same odours. The present study aimed to assess the relationships between food odour liking and liking of the corresponding foods. This study relied on a longitudinal design involving 235 toddlers who were assessed for both their observed liking of a set of food odours and their parent-reported liking of foods at 12 and 22 months. To assess odour liking, eight odorants representing pleasant and unpleasant foods were presented in bottles along with neu…

ODOUR STUDY WITH QUALITATIVE AND QUANTITATIVE RESEARCH METHODS IN VARIOUS DISTRICTS OF RIGA

2017

Different emission sources of odours become increasingly important environmental problem which may have a negative impact on human health and quality of life. Human odour perception may be subjective, however on odour perception threshold is considered to be the odorant concentration where at least half of odour assessor’s group members confirm the existence of odour, and then it is 1 OUE /m3. Nowadays more and more advanced technologies are used to measure odour concentration. Olfactometer Scentroid SM100 allows users to accurately quantify ambient odour concentration in field. Also this equipment allows to collect source samples and analyze odour in a laboratory. Odour study in 2016 and 2…
