In questo contributo si esamina un caso di concorrenza tra brand alimentari del mercato italiano, quello tra Ferrero Nutella e Mulino Bianco Pan di Stelle. In particolar modo viene esaminata la strategia di comunicazione da un punto di vista semiotico per il lancio e il posizionamento dei prodotti creme spalmabili e biscotti farciti.

International audience; Après avoir décliné la typologie des caractéristiques des produits en termes d'attributs de recherche, d'expérience et de croyance, les auteurs soulignent les mécanismes susceptibles d'assurer l'efficacité des transactions marchandes. Afin de cerner les enjeux liés à la loyauté des transactions dans le cas des attributs de croyance, ils montrent à l'aide d'un jeu simple, le caractère crucial des phases de définition, de vérification et de signalement, ces dernières nécessitant généralement l'intervention d'agents extérieurs à la transaction marchande.

Among variety of intelligent food packaging, pH indicator packaging is becoming more popular, which can be made from synthetic and natural compounds. The search for natural pH indicator dyes that can be used in intelligent food packaging systems has recently focused on anthocyanins extracted from plants. Thus, this work aimed to develop and characterize an intelligent tag for pH indicator based on gelatin and methylcellulose-film with butterfly pea extract (BPE). The results showed that the colors of BPE solutions had a tendency to change from red to blue in a pH range of 4.0 to 8.0. Abstract The increase of consumer demand for higher quality and longer shelf-life in foods, while reducing the use of non-compostable packaging materials, has encouraged research on biopolymers incorporating natural antimicrobial compounds. Cinnamaldehyde (CNMA) and allyl isothiocyanate (AITC) were incorporated into polycaprolactone (PCL) films by solvent casting. Abstract In the present study, thermally stable silver complexes were produced and incorporated into a poly-( l -lactide) (PLA) matrix by melt-compounding. The effect of the different formulations on the mechanical and color properties was first evaluated. Additionally, the release of silver ions to an aqueous environment was also monitored over time by anodic stripping voltammetry and correlated with the antimicrobial performance against Salmonella enterica. International audience; Carbon-13 NMR (CP-MAS and FSLG 1H–13C HETCOR) have been applied to chitosan salt films synthesized in acetic acid and exposed to different relative humidity environments (32% or 75%) at 20 °C for 1 month. It gives insight in the relationship between structure and functional properties according to the hydration level of this biomaterial as a film. The acetate ions trapped in the chitosan act as structuring agents between chitosan chains for the low hydration state. Water transfer through different films, as a function of the physical state of water in contact with the film, the relative humidity difference, and the water vapor pressure difference, was investigated. The films were two synthetic packagings (hydrophobic polyethylene and hydrophilic cellophane) and an edible film. The physical state of water affects water sensitive films, such as cellophane, inducing a higher liquid water transfer due to interactions with the polymer. We investigated the effects of natural antioxidants and modified atmosphere packaging (MAP) on the quality and shelf-life of Coryphaena hippurus (common dolphinfish) fillets. Fillets of the control group (CO) were simply placed on trays and not sealed. Fillets of the second group (MAP) were preserved in modified atmosphere (45% CO2, 50% N2, 5% O2), and fillets of the third group (MAP-AOX) were preserved by combining natural antioxidants from halophytes with modified atmosphere. In this paper we report on the use of a nanocomposite based on silver nanoparticles embedded in PVA as a plasmonic optical sensor to detect and quantify trace amounts of amines in gas and water, respectively. The transduction mechanism of the sensor is based on the changes of the LSPR band of Ag NPs when analyte molecules are chemisorbed on their surface. The Ag–PVA sensors are fabricated by means of a high-precision microplotter, a direct-write technology developed for printing materials from solution.
